1 small sweet yellow pepper, chopped

2 teaspoons chili powder
1 teaspoon ground cumin
8 cups torn romaine
2 tablespoons fresh cilantro leaves

2 tablespoons chopped fresh cilantro

4 medium green onions, chopped (1/4 cup)

1 can (11 oz) whole kernel corn with red and green peppers, drained
2 large tomatoes, chopped (2 cups)
2 cups shredded Colby-Monterey Jack cheese (8 oz)
2 cups broken tortilla chips

2 tablespoons reduced-sodium taco seasoning
1 cup salsa
1 tablespoon lime juice
6 ounces baked tortilla chips (about 70 chips)
12 cups chopped iceberg lettuce
6 plum tomatoes, seeded and chopped
1 can (15 ounces) black beans, rinsed and drained
1-1/2 cups shredded reduced-fat Mexican cheese blend
1 large sweet yellow or red pepper, thinly sliced
1 medium red onion, thinly sliced
1/3 cup fat-free sour cream

2 heads Boston lettuce, leaves separated
1 1/2 cups crushed tortilla chips
1 cup small cherry tomatoes, halved
1 cup (about 4 ounces) shredded cheese, such as white cheddar or Monterey Jack
