Time 35m

Yield 5 serving(s)

Number Of Ingredients 11

1 1/4 lbs lean ground turkey
2 medium zucchini, diced (2 cups)
1 large bell pepper, chopped (1 cup)
1 medium onion, chopped (1 cup)
1 cup chopped tomato
3/4 cup frozen corn, thawed
1 teaspoon olive oil, divided
3 -4 tablespoons taco seasoning
1/3 cup water
4 garlic cloves, minced
salt and pepper

Steps:

  • In a large non-stick skillet heat 1/2 tsp of oil over medium heat. Add ground turkey, salt and pepper to taste, and cook through until no longer pink. Remove to a bowl.
  • Heat remaining oil over medium-high heat. Add garlic, onions, peppers, and zucchini. Cook until vegetables begin to soften, about 10 minutes.
  • Mix in corn and cook another 5 minutes.
  • Add 2 tablespoons of seasoning and mix. Add ground turkey, water, and remaining seasoning. Mix well.
  • Add tomatoes, mix well, and cook until heated through.

Tips:

  • If you don't have ground turkey, you can substitute ground chicken or beef.
  • To make the taco filling ahead of time, cook the turkey and season it with the taco seasoning. Let it cool completely, then store it in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, simply reheat the turkey in a skillet over medium heat until warmed through.
  • Toppings can include shredded lettuce, diced tomatoes, sour cream, guacamole, salsa, and cheese.
  • If you want a crispier taco shell, bake them in the oven at 350 degrees Fahrenheit for 10-12 minutes before filling them.
  • For a healthier taco, use whole-wheat tortillas and lean protein, such as ground turkey or chicken.

Conclusion:

Turkey taco filling is a delicious and versatile dish that can be enjoyed in many different ways. Whether you're looking for a quick and easy weeknight meal or a fun party appetizer, this recipe is sure to please everyone. So next time you're craving tacos, give this turkey taco filling a try!
