2 tablespoons olive oil
1 pound ground turkey
2 small onions, chopped
1 (4 ounce) package sliced fresh mushrooms
6 cloves garlic, minced

2 tablespoons all-purpose flour
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup milk
1 teaspoon half-and-half, or to taste

1 onion, diced
3 cloves garlic
1 can black beans, drained and rinsed
1 can yellow corn, drained and rinsed
1 jar salsa
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
guacamole, to taste

Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a sharp knife, cut off the tops of each bell pepper. Use the knife to help cut out and remove the seeds and ribs from inside the peppers.
  • Place the peppers in a lightly greased roasting pan and set aside.
  • Heat the oil in a large skillet over medium-high heat. Toss in the onion, cumin, oregano, paprika, salt, and black pepper, and sauté until the onions have softened, about 2-3 minutes.
  • Toss in the garlic and sauté until fragrant, about 30 seconds.
  • Move the onions away from the center of the pan to create an open surface in the skillet. Place the ground turkey in the center of the pan and break up the meat.

8 large red bell peppers - tops, seeds, and membranes removed

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.

1 cup quinoa (or 1/2 cup quinoa and 1/2 cup bulgar wheat)
2 cups chicken stock
6 bell peppers (I use three green, three red)
1 tablespoon olive oil
1 lb ground turkey
1 (14 ounce) can diced tomatoes, drained
1 (6 ounce) can tomato paste
1/2 vidalia onion, chopped
4 garlic cloves, chopped
1/4 cup Worcestershire sauce
1/2 cup shredded Italian cheese (I used parmesan and asiago blend)
salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Combine quinoa and chicken stock in a saucepan. Bring to a boil and reduce heat to simmer for 15-17 minutes until all of the liquid is absorbed.
  • Meanwhile, cut the tops off of the bell peppers, remove the seeds and set aside in a baking dish sprayed with cooking spray. Chop the tops of the peppers (will add to the meat mixture later).
  • Heat the olive oil over medium high heat in a large sauce pan and saute the garlic.
  • Add chopped onions and peppers. Saute 2-3 minutes.
  • Add the ground turkey, worcestershire sauce, salt and pepper to the pan. Cook until the meat is browned.
  • Add the tomatoes and tomato paste. Stir to combine. Cook until most of the liquid is absorbed (5 minutes).

  • Fill each pepper with the mixture. Cook in preheated oven for 30 minutes.
  • After 25 minutes, top each pepper with italian cheese. Cook five more minutes (cheese will melt and begin to brown).

1 onion, chopped
2 garlic cloves, minced
1 jalapeno pepper, chopped

1 lb ground turkey
2 tablespoons chili powder (if you don't want it quite as spicy use only 1 tablespoon)

1 cup cooked brown rice
1 cup frozen peas, thawed
1 cup frozen corn kernels, thawed
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 375°F.
  • Wash peppers, cut off tops and remove seeds, cores and membranes.

8 orange bell peppers

Steps:

  • In a large skillet, heat the oil and cook onions and garlic for 3 minutes, or until they start to soften. Add the ground turkey to the pan, followed by salt, pepper, and oregano. Stir and cook for 3-4 minutes.

This was the first time the Crew and I cooked with farro... and we LOVED it! These peppers smell good, look great and taste delicious.

6 large green bell peppers
1 lb 93% lean ground turkey
2 c broth (I used beef)
1 c farro, pearled (Italian whole grain, like wheat berries)
10 oz whole mushrooms, stems removed, finely chopped
1 c chopped tomatoes, fresh or canned
1/2 large onion, finely chopped
4-6 clove garlic, minced
2/3-3/4 c Romano cheese, grated (or any hard cheese that you prefer)
1/2 tsp dried thyme
1 tsp dried oregano
salt & freshly ground black pepper, to taste

Steps:

  • 1. Cook the farro in the broth. This can be done ahead of time.
  • 2. Prepare the peppers by cutting off tops, stems and removing the inner seeds and membrane. (I cut off a little extra so I can chop it up and add to the filling.) Place them in a large baking dish sprayed with non-stick or lightly oiled.
  • 3. In a large skillet on med-high heat, cook the ground turkey. Move to large bowl to cool before blending with other ingredients.
  • 4. Chop the mushrooms and onions and sautee in olive oil until tender. Add garlic and cook gently for a few minutes.
  • 5. In a large mixing bowl, add cooked farro, tomatoes, onion/mushroom mixture, grated cheese and herbs and blend well. Taste the mixture and add salt/pepper if desired. (Be careful - the cheese is already pretty salty!)
  • 6. Stuff the farro mixture into each pepper and pack firmly. Scatter any remaining stuffing around the peppers in the dish. No need to add water - the peppers will give off liquid as they cook.
  • 7. Cover the peppers lightly with foil and bake in a pre-heated 350F oven for 30-45 minutes - until they reach the desired level of tenderness. If desired - top with grated mozzarella for the last few minutes of cooking.

This is a yummy homey meal. This recipe usually use ground beef, however, I do not eat red meat so I use ground turkey and they come out lighter and less gready, and still delicious. You may prefer using ground beef.

5 bell peppers, mince the tops of the peppers
1 (16 ounce) package ground turkey
1 egg
1 minced onion
1 large minced tomatoes
1/8 cup uncooked rice
salt
pepper
parsley

Steps:

  • Cut the top off of the 5 bell (any color) peppers.
  • Clean out the seeds.
  • Set aside.
  • Mix remaining ingredients and use the mixture to stuff the peppers.
  • Put stuffed peppers upright in a stock pot.
  • Fill the pot with water.
  • cover.
  • Bring to a boil and then simmer until the peppers are tender and the meat and rice is cooked, about an hour.
  • Serve with sour cream on the side and mashed potato (traditional accompanyments).

2 large green peppers, tops and seeds removed
1/2 pound ground turkey
1 small onion, chopped
1 garlic clove, minced
2 tablespoons butter
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup milk
1/2 cup chopped tomato
4 tablespoons shredded cheddar cheese, divided

Steps:

  • In a large saucepan, cook peppers in boiling water for 3 minutes. Drain and rinse with cold water; set aside. , In a skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain and set aside. In the same skillet, melt butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Return turkey mixture to skillet. Stir in tomato and 2 tablespoons cheese; heat through. Spoon into peppers; sprinkle with the remaining cheese. , Place in a greased 1-qt. baking dish. Cover and bake at 350° for 25-30 minutes or until peppers are tender and filling is hot.

1 lb lean chopped turkey meat
1 garlic, minced
1/4 onion, minced
1 tbsp chopped fresh cilantro or parsley
1 tsp garlic powder
1 tsp cumin powder
salt to taste
3 large sweet red bell peppers, washed
1 cup fat free chicken broth
1/4 cup tomato sauce
1 1/2 cups cooked rice
Olive oil spray
1/4 cup reduced fat shredded cheese

Steps:

  • Heat oven to 400°. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame. Add onion, garlic and cilantro to the pan. Saute about 2 minutes and add ground turkey. Season with salt and garlic powder, and cumin and brown meat for several minutes until meat is completely cooked through. Add 1/4 cup of tomato sauce and 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes. Combine cooked rice and meat together. Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can. Place all stuffed pepper halves on the baking dish and pour the remainder of the chicken broth on the bottom of the pan. Cover tight with aluminum foil and bake for about 35 minutes. Top with shredded cheddar cheese and enjoy

Tips:

  • To make the peppers easier to stuff, cut them in half lengthwise instead of crosswise. This will also help them to cook more evenly.
  • To prevent the peppers from becoming soggy, cook them upside down for the first half of the cooking time.
  • If you don't have any cooked rice on hand, you can use instant rice or even quinoa.
  • Feel free to get creative with your stuffing. You can add other vegetables, such as diced onions, celery, or carrots. You can also add cooked ground beef or sausage.
  • If you're short on time, you can use a pre-made jarred tomato sauce. Just be sure to doctor it up with some fresh herbs, such as basil or oregano.
