LEMONY WHITE BEAN SOUP WITH TURKEY AND GREENS

Lemony White Bean Soup With Turkey and Greens image

Bright with lemon and herbs, and packed with hearty greens, this highly adaptable soup can be either light and brothy or thick and stewlike, depending on your preference. Smashing some of the beans to release their starch will give you a thicker soup that's almost worthy of a fork. To keep it on the brothy side, add a little more liquid and leave the beans intact. Either way, it's a warming, piquant, one-pot meal that's perfect for winter.

Time 45m

Yield 4 servings

Number Of Ingredients 15

3 tablespoons olive oil
1 large onion, diced
1 large carrot, diced
1 bunch sturdy greens, such as kale, broccoli rabe, mustard greens or collard greens
1 tablespoon tomato paste
3/4 teaspoon ground cumin, plus more to taste
1/8 teaspoon red-pepper flakes, plus more to taste
1/2 pound ground turkey
3 garlic cloves, minced
1 tablespoon finely grated fresh ginger
1 teaspoon kosher salt, plus more to taste
1 quart chicken stock
2 (15-ounce) cans white beans, drained and rinsed
1 cup chopped fresh, soft herbs, such as parsley, mint, dill, basil, tarragon, chives or a combination
Fresh lemon juice, to taste

Steps:

  • Heat a large pot over medium-high for a minute or so to warm it up. Add the oil and heat until it thins out, about 30 seconds. Add onion and carrot, and sauté until very soft and brown at the edges, 7 to 10 minutes.
  • Meanwhile, rinse the greens and pull the leaves off the stems. Tear or chop into bite-size pieces and set aside.
  • When the onion is golden, add tomato paste, 3/4 teaspoon cumin and 1/8 teaspoon red-pepper flakes to the pot, and sauté until paste darkens, about 1 minute. Add turkey, garlic, ginger and 1 teaspoon salt, and sauté, breaking up the meat with your spoon, until turkey is browned in spots, 4 to 7 minutes.
  • Add stock and beans, and bring to a simmer. Let simmer until the soup is thick and flavorful, adding more salt if needed, 15 to 25 minutes. If you like a thicker broth, you can smash some of the beans with the back of the spoon to release their starch. Or leave the beans whole for a brothier soup.
  • Add the greens to the pot and simmer until they are very soft. This will take 5 to 10 minutes for most greens, but tough collard greens might take 15 minutes. (Add a little water if the broth gets too reduced.)
  • Stir herbs and lemon juice into the pot, taste and add more salt, cumin and lemon until the broth is lively and bright-tasting. Serve topped with a drizzle of olive oil and more red-pepper flakes, if desired.

COZY ORZO AND WHITE BEAN SOUP

Cozy Orzo and White Bean Soup image

I say "cozy" cause this is my favorite comfort soup, it's so rich in flavour you'll want to make it every time it rains!

Provided by Le Beast

Categories     Stocks

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

1 tablespoon vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1 (398 ml) can stewed tomatoes
4 cups vegetable stock
2 tablespoons chopped sun-dried tomatoes packed in oil, drained
1 pinch dried chili pepper flakes (I use more cause I like it spicy!)
1/2 cup orzo pasta
1 (540 ml) can white kidney beans, drained and rinsed
salt and pepper, to taste
parmesan cheese, for topping

Steps:

  • In a large heavy saucepan, heat the oil over medium heat.
  • Add onion and garlic, sauté for 4 minutes or until onion is soft.
  • Add tomatoes, stock, sun-dried tomatoes and pepper flakes and bring to a boil.
  • Add orzo and simmer about 12 minutes, or until pasta is cooked, stirring often to prevent sticking on the bottom.
  • Add beans and heat through, about 5 minutes.
  • Add salt and pepper to taste.
  • Serve topped with as much parmesan cheese that you like!
  • Now pick a cozy spot on the couch and enjoy!

Tips:

  • Choose the right turkey: For the best flavor, use a fresh or frozen whole turkey. Avoid using a pre-cooked turkey, as it will not have the same depth of flavor.
  • Roast the turkey bones: Roasting the turkey bones before making the soup adds a rich, golden color and flavor to the broth. Be sure to roast the bones at a high temperature (425°F) for at least 30 minutes.
  • Use a variety of vegetables: This recipe calls for carrots, celery, and onion, but you can also add other vegetables such as parsnips, turnips, or leeks. Whatever vegetables you choose, be sure to chop them into small pieces so that they cook evenly.
  • Simmer the soup for at least 1 hour: The longer you simmer the soup, the more flavorful it will be. Simmer the soup for at least 1 hour, or up to 2 hours if you have the time.
  • Add the orzo and beans towards the end of cooking: Orzo and beans only take a few minutes to cook, so add them to the soup towards the end of cooking so that they don't get overcooked.
  • Season the soup to taste: Once the soup is finished cooking, season it with salt, pepper, and other herbs and spices to taste. You can also add a squeeze of lemon juice or a dollop of sour cream for extra flavor.

Conclusion:

This turkey soup with orzo and white beans is a hearty, flavorful, and easy-to-make meal that is perfect for a cold winter day. It is also a great way to use up leftover turkey after Thanksgiving or Christmas. So next time you have a turkey carcass, don't throw it away! Make this delicious soup instead.
