1 tablespoon canola oil
1 package (13 ounces) smoked turkey sausage, sliced
4 cups small fresh broccoli florets
2 cups water
1 can (14-1/2 ounces) diced tomatoes, drained
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
2 cups uncooked instant brown rice
1/2 cup shredded sharp cheddar cheese
Optional toppings: Reduced-fat sour cream and Louisiana-style hot sauce

Steps:

  • In a large skillet, heat oil over medium-high heat. Add sausage; cook and stir until browned, 2-3 minutes. Stir in broccoli; cook and stir 2 minutes longer., Add water, tomatoes and seasonings; bring to a boil. Stir in rice. Reduce heat; simmer, covered, 5 minutes., Remove from heat; stir rice mixture and sprinkle with cheese. Let stand, covered, until liquid is almost absorbed and cheese is melted, about 5 minutes. If desired, serve with sour cream and hot sauce.

2 bunches broccoli rabe, stems trimmed
1 pound orecchiette pasta
3 tablespoons olive oil
1 pound turkey Italian-style sausage, casings removed
3 garlic cloves, minced
Pinch dried crushed red pepper flakes
1/4 cup grated Parmesan
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
Sea salt and freshly ground black pepper
4 tablespoons unsalted butter, optional

Steps:

  • Cook the broccoli rabe in a large pot of boiling salted water until crisp tender, about 1 minute. Transfer the broccoli rabe to a large bowl of ice water to cool, saving the cooking water. Bring the reserved cooking water back to a boil.
  • Heat the oil in a heavy large skillet over medium heat. Add the sausage and cook, breaking it up into pieces with a spoon, until browned and juices form, about 12 minutes. Add the garlic and red pepper flakes, and saute until fragrant, about 2 minutes.
  • Meanwhile, when the reserved cooking water is boiling, add the orecchiette and cook until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes.
  • Strain the broccoli rabe and add it to the pan with the sausage mixture and toss to coat with the juices. Add the pasta to the skillet. Stir in the Parmesan and serve immediately.
  • In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
  • Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.

I had to make something for a luncheon at work. I needed to feed a crowd and I was sooo busy that week that I needed something easy. So here it is. I did this in two days only because I didn't have enough time in one day. It is easy and quite delicious. This got great raves! It's a good party dish. Measurements might be a tad off. I'm the type of cook that just throws in.

3 lbs sweet turkey sausage
1 1/4 lbs penne pasta
2 heads broccoli, cut into small pieces, i didn't use stalks
3 medium onions, cut up
1 cup white wine
3 tablespoons sweet butter (can use margarine)
3 garlic cloves
1 dash oregano
1 dash sage
olive oil, enough to cover bottom of large pan and maybe a tad more, definitely a tad more (I love olive oil)
chili pepper flakes, to taste
grated parmesan cheese, enough to cover top and mix in casserole (Be generous)

Steps:

  • Cut up onions and fry in olive oil till carmelized.
  • As I said I did this the day before and put them in refrigerator.
  • Just because of a time issue.
  • If you make it all in one day carmelize onions and then put aside.
  • Cut through the casing on the sausage and cut sausage into small pieces.
  • Throw away casing.
  • While olive oil is hot throw sausage in pan.
  • Cut up your broccoli and throw in the pan.
  • Add wine and 2 tablespoons of butter.
  • About 15 minutes.
  • While doing this boil your penne with some salt.
  • I use Kosher salt.
  • Once the penne is boiled and drained put in large pan.
  • Then add broccoli, sausage and all your spices.
  • Mix in the carmelized onions.
  • Then add grated parmasean cheese.
  • Mix well and have some on top.
  • Bake for 15 minutes 350 oven.
  • Everything is really cooked.
  • You just want to heat it up.
