TURKEY RICE
What ultimately sets a great holiday leftover dish apart from the rest? The answer: lots of flavor, not a lot of ingredients, and the ability to stand on its own rather than remind us of the meal it came from. This turkey rice, which is in fact a little more turkey than rice, checks all the boxes, and a fresh, 3-ingredient salsa adds the bright finishing touch.

RICE ALMONDINE
Nice and easy, and of course tastes good. Originally found on mealsforyou.com. Steps:

- Bring to a boil and stir in rice and butter.
- Cover pan and reduce heat to medium low; cook 20 minutes.
- Remove from heat and let stand 5 minutes.

Tips:
- To save time, use pre-cooked rice. If you don't have any on hand, you can cook rice while the turkey is browning. - If you don't have slivered almonds, you can use chopped almonds or another type of nut, such as walnuts or pecans. - If you want a more flavorful dish, use a dry white wine instead of chicken broth. - You can also add other vegetables to the dish, such as diced carrots, celery, or onions. - If you don't have a rice cooker, you can cook the rice on the stovetop. Just bring a pot of water to a boil, add the rice, and then reduce the heat to low. Cover the pot and simmer for about 18 minutes, or until the rice is tender and all of the water has been absorbed. Conclusion:
Turkey rice almondine is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover turkey. The combination of turkey, rice, almonds, and vegetables is both flavorful and satisfying. This dish is sure to be a hit with your family and friends.
