TURKEY BURGERS

Turkey Burgers image

"I always like to offer a turkey burger at my outdoor barbecue for friends who no longer eat red meat," says Bobby. "Luckily poultry is a perfect canvas for many big flavors, and this combination of tart goat cheese, sweet Meyer lemon-honey and peppery arugula makes for one outstanding burger."

Time P1DT30m

Yield 4 servings

Number Of Ingredients 11

1/4 cup Dijon mustard
1 heaping tablespoon clover honey
1 tablespoon fresh orange juice
1/2 teaspoon lemon zest
1 teaspoon fresh Meyer lemon juice, from Meyer lemons, if possible
Salt and freshly ground black pepper
1 1/2 pounds 90-percent lean, freshly ground turkey (not all white meat), chilled
Salt and freshly ground black pepper
8 slices goat cheese, sliced 1/2-inch thick
4 sesame seed hamburger buns, split and lightly grilled
Watercress, for serving

Steps:

  • For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
  • For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

GRILLED TURKEY BURGERS

Grilled Turkey Burgers image

There are a couple steps to ensure a crisp on the outside, juicy on the inside and all around delicious grilled turkey burger. Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

Time 40m

Yield 4 servings

Number Of Ingredients 9

Neutral oil (such as canola), for greasing
1 medium yellow onion, peeled
1 pound ground turkey
1/4 cup store-bought or homemade barbecue sauce
2 tablespoons mayonnaise
Kosher salt (such as Diamond Crystal)
Black pepper
4 hamburger buns
Toppings (such as shredded iceberg, sliced onion, tomato and pickles) and condiments (mayonnaise, barbecue sauce or mustard), as desired

Steps:

  • Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
  • Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
  • When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
  • Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
  • Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.

Tips:

  • Choose high-quality ground turkey and pork. Look for meat that is fresh, lean, and has a good ratio of fat to protein. This will help ensure that your burgers are juicy and flavorful.
  • Use a variety of seasonings. Don't be afraid to experiment with different herbs, spices, and sauces to create your own unique burger blend. Some popular options include garlic powder, onion powder, paprika, cumin, and chili powder.
  • Mix the ingredients gently. Overmixing the meat can make the burgers tough. Be gentle when mixing the ingredients together, just until they are combined.
  • Form the burgers gently. Again, be gentle when forming the burgers. If you press them too firmly, they will be dense and dry. Just gently shape the meat into patties.
  • Cook the burgers over medium heat. This will help prevent them from drying out. Cook the burgers for about 4-5 minutes per side, or until they are cooked through.
  • Let the burgers rest before serving. This will help the juices redistribute throughout the burgers, making them more tender and flavorful.

Conclusion:

Turkey pork burgers are a delicious and healthy alternative to traditional beef burgers. They are packed with flavor and can be customized to your liking. With a little bit of effort, you can create juicy, flavorful turkey pork burgers that your family and friends will love. So what are you waiting for? Give this recipe a try today!
