1 tablespoon olive oil
1 pound ground turkey
1 ½ teaspoons olive oil
1 large yellow onion, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
2 bay leaves
½ cup white wine
1 (8 ounce) can tomato sauce
⅓ cup chopped green olives
⅓ cup raisins
½ cup canned black beans
1 tablespoon olive brine
1 tablespoon capers
2 teaspoons cayenne pepper, or to taste
2 teaspoons ground cumin

Steps:

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Remove the turkey and drain and discard any excess grease.

1 28-ounce can chopped tomatoes with juice
1 tablespoon canola oil
1 medium onion, finely chopped
2 large garlic cloves, minced
1 pound ground turkey breast
1/4 teaspoon ground black pepper
1 teaspoon medium-hot chili powder (more to taste)
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 cup raisins
1 tablespoon plus 2 teaspoons cider vinegar or rice vinegar
Salt to taste
1 tart apple, peeled, cored and finely chopped
12 corn tortillas
2 cups shredded cabbage (about 6 ounces)
Salsa and crumbled queso fresco as desired

Steps:

  • Pulse the canned tomatoes with juice in a food processor fitted with the steel blade until puréed. Set aside.
  • Heat the canola oil in a large, heavy skillet over medium heat and add the onion. Cook, stirring often, until onion is tender, about 5 minutes. Add the garlic and cook, stirring, until it is fragrant, 30 seconds to a minute. Turn the heat up to medium-high and add the ground turkey.   • Cover the cabbage with cold water and let sit for 5 minutes. Drain and spin dry. Toss with the remaining vinegar. Heat the tortillas and spoon the picadillo onto each one. Top with shredded cabbage, garnish with salsa and crumbled queso fresco if desired, and serve.

1 pound lean ground turkey
1 medium green pepper, chopped

1 tablespoon cider vinegar
1 medium tart green apple, peeled and chopped

1/3 cup finely diced white onion
1/4 cup finely diced celery
1/4 cup finely diced carrot
1 ear corn, shucked and kernels removed or 1 cup frozen corn, thawed
2 garlic cloves, minced
2 jalapenos, stemmed and deveined
1 pound ground turkey
1 1/2 cups tomato puree
1 bay leaf
2 sprigs fresh thyme, leaves removed and chopped
2 springs fresh oregano, leaves removed and chopped
Salt and freshly ground black pepper
6 hamburger buns
Serving suggestion: Pickled jalapenos and avocado slices.
