NO-FUSS TURKEY NOODLE SOUP

No-Fuss Turkey Noodle Soup image

Make good use of your leftover dark meat without the fuss of boiling the carcass. Simply pick through the carcass before you toss the bird and save the meat for a quick next-day soup. Serve with warm bread for a great hot meal on a cold winter day. I substitute fresh herbs wherever possible, but for a quick meal after the intense preparation of a whole turkey, dried herbs do nicely. If you don't have chipotle chili powder, regular chili powder can be substituted. The chipotle provides a very light smoky flavor in the background. White meat can be used, but your broth will be less flavorful. Leftovers freeze well. Use whatever type pasta you prefer.

2 cups celery, cut into 1/4-inch dice
1 1/2 cups finely chopped white part of leeks
1/2 cup finely chopped peeled onion

2 cups zucchini, cut into 1/2-inch cubes
1/2 teaspoon finely minced garlic
1/2 cup orzo (rice-shaped Greek pasta)

1 cup cooked turkey, white or dark meat, cut into 1/2-inch cubes
1/4 cup finely chopped parsley
1/2 cup freshly grated Parmesan cheese

Steps:

  • Put the bones in a kettle and add any leftover turkey skin.
  • Add the water, giblet gravy, bay leaf, thyme, celery tops, coarsely chopped carrots, coarsely chopped onion, green part of leeks, parsley, salt and pepper. Bring to the boil and let simmer one hour. As the broth cooks, skim off and discard any scum, foam and fat that rises to the surface.
  • Strain the broth into a clean kettle, discarding the solids, and skim off all fat from the top. Bring to the boil and add the diced carrots, diced celery, white part of leeks, finely chopped onion, tomatoes, zucchini and garlic. Let simmer about 10 minutes, then add the orzo. Continue cooking five minutes and add the corn kernels and cubed turkey meat. Continue cooking 15 minutes. Stir in the parsley. Serve with the grated Parmesan cheese on the side.

Tips:

  • Use a variety of vegetables. This will give your soup a more flavorful and nutritious broth. Some good options include carrots, celery, onion, garlic, and tomatoes.
  • Don't be afraid to experiment with different herbs and spices. A few well-chosen herbs and spices can really elevate the flavor of your soup. Some good options include thyme, rosemary, oregano, basil, and black pepper.
  • Simmer your soup for at least 30 minutes. This will allow the flavors to meld and develop. You can also simmer your soup for longer if you want a more intense flavor.
  • Add the noodles at the end of the cooking time. This will prevent them from becoming overcooked and mushy.
  • Garnish your soup with fresh herbs or a dollop of sour cream before serving. This will add a pop of color and flavor.

Conclusion:

Turkey noodle tomato soup is a classic comfort food that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a quick and easy meal, give this soup a try. You won't be disappointed!
