Time 1h

Yield 4 to 6 servings

Number Of Ingredients 20

3 medium poblano peppers, seeded and stemmed, chopped
1 cup chicken stock
2 cloves garlic, chopped
1 small onion, chopped
A small handful fresh cilantro leaves, plus a few leaves for garnishing
Salt and freshly ground black pepper
3 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 cup heavy cream or Mexican crema
2 tablespoons EVOO
3 tablespoons butter
12 ounces sliced button or crimini mushrooms
2 cups fresh (about 4 ears) or frozen and defrosted corn kernels
2 shallots or 1 small red onion, chopped
4 to 5 cups chopped cooked turkey meat
1 cup chicken stock
Six 8-inch flour tortillas
2 1/2 cups shredded Monterey Jack or Cheddar
1 1/2 cups shredded Manchego cheese

Steps:

  • For the sauce: In a blender or food processor, combine the peppers with the stock, garlic, onions, cilantro and some salt and pepper, then puree. In a saucepot over medium heat, melt the butter, then whisk in the flour. Add the milk and cream and raise the heat a bit. Add the poblano puree and simmer to thicken and cook the sauce, 20 to 25 minutes.
  • For the casserole: Heat the EVOO in a large skillet over medium-high heat; add the butter and melt into the oil. Brown the mushrooms, about 10 minutes. Then add the corn and shallots, and cook to lightly brown the corn and soften the shallots, about 5 minutes more. Add the turkey and stock and heat through.
  • Char the tortillas over an open flame on a gas burner, or in dry skillet.
  • Layer half the turkey, mushrooms and corn in a casserole dish, and top with half the sauce, cheese and a shingled layer of 3 tortillas. Top the tortillas with the remaining turkey, mushrooms and corn, tortillas, sauce and cheese. Cool and store for a make-ahead meal, or bake to serve. Bake at 400 degrees F from room temperature until heated through and brown and bubbly.

There is a similar recipe posted, however, this is the Cooking Light Quick and Easy version that I use, and since I just spent 30 minutes going through my cookbooks trying to find it, thought I'd post it here for future reference.

NORMA'S TURKEY AND MUSHROOM CASSEROLE

Norma's Turkey and Mushroom Casserole image

Just had another wonderful Thanksgiving dinner at our dear friends house yesterday and she sent us home with some left overs. My sweetie ate his all gone and said that we sould make this again when we either have chicken or ham left from a dinner. This is one recipe I'll keep on hand for sure.

Provided by Norma DeRemer

Categories     Casseroles

Number Of Ingredients 14

1 Tbsp butter
3 to 4 c turkey, cut into 1/2 inch pieces
1 medium onion or 3 shallots, sliced
8 oz button mushrooms, halved or quartered
1 can(s) (14 1/2 ounce) diced tomatoes, undrained
2 Tbsp all purpose flour
1/2 tsp dried thyme leaves
cheese puff topping (recipe next)
1/2 c water
1/4 c 1/2 stick butter, cut up
1/4 tsp salt
1/2 c all purpose flour
2 eggs
2 oz sharp cheddar cheese, diced (a little over 1/2 cup)

Steps:

  • 1. Preheat your oven to 400 for cheese puffs.
  • 2. Meanwhile, melt butter in large skillet over medium heat and add turkey and onions.
  • 3. Cook until onions are clear; about 3 minutes and add mushrooms. Cook and stir for 5 minutes.
  • 4. Add tomatoes, flour and thyme and cook and stir until blended and bubbly.
  • 5. Lower heat and cover to keep warm.
  • 6. Cheese Puff Topping:
  • 7. Heat water, butter and salt in small saucepan over hight heat to a full rolling boil.
  • 8. Reduce heat and quickly stir in flour, mixing vigorously until mixture leaves sides of pan in a ball.
  • 9. Place flour mixture in mixer bowl with flat beater.
  • 10. Turn to speed 2 and add eggs, one at a time, mixing about 30 seconds after each addition.
  • 11. Stop and scrape bowl and turn mixer to speed 4 and beat about 15 seconds and add cheese.
  • 12. Turn mixer speed to sir and mix about 10 seconds and set aside.
  • 13. Pour the warm filling into a 2 quart casserole dish sprayed with non stick cooking spray.
  • 14. Spoon topping into 4 mounds on top of filling.
  • 15. Place in oven and bake for 35 to 45 minutes or until pastry is puffed and browned and filling is bubbly.
  • 16. Serve hot with your favorite salad.

Tips:

  • Use a variety of mushrooms. This will give your casserole a more complex flavor. Some good options include cremini, shiitake, and oyster mushrooms.
  • Don't overcrowd the pan. If you do, the mushrooms will steam instead of sautéing, and they won't have as much flavor.
  • Cook the mushrooms until they are browned. This will help to develop their flavor and give them a nice texture.
  • Use a good quality broth. This will make a big difference in the flavor of your casserole. If you don't have any broth on hand, you can use water, but add a little bit of salt and pepper to taste.
  • Don't overcook the turkey. Turkey can dry out easily, so it's important to cook it just until it is cooked through. You can check the internal temperature of the turkey with a meat thermometer; it should be 165 degrees Fahrenheit.
  • Serve the casserole hot. This is the best way to enjoy its flavors.

Conclusion:

Turkey mushroom casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover turkey after Thanksgiving or Christmas. With its creamy sauce, tender turkey, and flavorful mushrooms, this casserole is sure to be a hit with your family and friends.
