1/4 cup butter
1 medium onion, diced
1 tablespoon garlic, minced
2 medium carrots, thinly sliced
1/4 cup all-purpose flour
2 + 1/2 cups vegetable or poultry broth
2 cups heavy cream (or half and half)
2 cups cooked turkey breast, shredded
2 cups fresh baby spinach
1 (500 grams) package potato gnocchi
1/2 teaspoon Italian seasoning
1/2 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper (or to taste)

Steps:

  • In a large pot or 4 quart Dutch oven, melt butter over medium-high heat until it starts to bubble, about 1 minute. Add onion, garlic, and carrots and sauté until tender, about 3-4 minutes
  • Add flour and stir well until evenly combined and thickened into a paste, about 1 minute.

4 cups chicken broth

1 (6 ounce) bag baby spinach leaves
1 tablespoon cornstarch
2 tablespoons cold water
2 cups half-and-half cream
salt and ground black pepper to taste

16 ounces gnocchi
4 tablespoons butter
1 cup onion, diced
1/2 cup celery, diced (about 2 stalks)
2 garlic cloves, minced
1/4 cup flour
1 1/2 cups heavy cream
2 1/2 cups 1% low-fat milk
1 (14 ounce) can chicken broth
1 cup carrot, shredded
2 bay leaves
12 ounces turkey breast
1 cup frozen spinach, coarsely chopped
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/2 cup shredded mozzarella cheese
