1 tablespoon olive oil
1/2 onion, chopped
1/2 red or green bell pepper, chopped
1 cup boiled potatoes, chopped
1/2 cup leftover cooked chopped turkey
6 eggs, lightly beaten
1/4 cup cream
Salt and pepper
2 tablespoons chopped parsley, basil or cilantro
1/2 cup grated cheddar, Monterey jack or mozzarella

Steps:

  • Preheat the broiler.
  • Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
  • In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2 to 3 minutes until the frittata puffs

1 10- to 12-inch round French bread or sheepherder's bread
3 tablespoons olive oil
1/2 pound spicy Italian turkey sausages, casings removed
1 onion, chopped
2 zucchini, trimmed, diced
1 green bell pepper, diced
1 large tomato, seeded, diced
3 garlic cloves, chopped
1/4 cup chopped fresh basil
10 large eggs
1/3 cup grated Parmesan cheese

Steps:

  • Cut bread horizontally in half. Cut out soft insides, leaving 1/2-inch-thick shells. Brush inside of bread shells with 1 tablespoon olive oil.
  • Crumble sausage into large non-stick broilerproof skillet. Sauté over medium heat until brown, about 5 minutes. Transfer sausage to bowl. Add onion, zucchini, bell pepper, tomato and garlic to skillet and sauté until vegetables are tender and liquid evaporates, about 9 minutes. Mix in basil. Cool briefly.
  • Preheat broiler. Beat eggs in large bowl to blend. Season with salt and pepper. Mix in sausage, then vegetable mixture. Heat remaining 2 tablespoons oil in same skillet over medium heat. Pour in egg mixture. Cover and cook until almost set, occasionally lifting edges to allow uncooked eggs to flow underneath, about 7 minutes.
  • Sprinkle top of frittata with Parmesan. Broil until eggs are set in center and golden brown, about 3 minutes. Run spatula around edge of skillet to loosen frittata and slide into bottom shell of bread over, pressing to fit. Press top half of bread over. Cut into wedges and serve or wrap in foil and serve within 1 hour.

Nice holdover until that wonderful Thanksgiving dinner! **This recipe is measure for an 8-inch pan but can be adjusted to an 11-inch by doubling ingredients.

4 tablespoons olive oil
1/2 cup bell pepper (diced, color variation, green or red, etc.)
1/2 cup onion (diced)
1/4 cup turkey (roughly chopped, quality cut of deli meat)
1 teaspoon salt (coarse)
1/2 teaspoon black pepper
1 garlic clove (minced, may substitute 1 tsp. dry)
5 eggs (large)
1/4 cup milk
1 cup cheese (shredded, Velveeta, cheddar, cheddar blend)

Steps:

  • Heat half the olive oil to medium.
  • Stir in peppers and onions and seasoning (salt, pepper, garlic).
  • Sauté for about 12 minutes or until soft. (It is important to do this over medium heat. We are not looking for the onions to caramelize.)
