Turkey Cutlets with Corn, Sage and Prosciutto Stuffing image

2 pounds turkey breast cutlets (2 packages, 12 pieces)
2 teaspoons poultry seasoning
Salt and pepper
3 tablespoons extra-virgin olive oil, 3 turns of the pan
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken stock or canned turkey broth, available around Thanksgiving in markets
1 tablespoon extra-virgin olive oil
2 tablespoons butter
3 ribs celery from the heart, chopped
1 medium onion, chopped
Salt and pepper
2 teaspoons poultry seasoning
4 sprigs fresh sage (2 tablespoons) chopped
2 tablespoons chopped flat leaf parsley, eyeball it
1/4 pound prosciutto, deli sliced like bacon, then chopped
3 corn muffins, crumbled
1 cup chicken stock or broth or, canned turkey broth

Steps:

  • Heat a large skillet over medium high heat. Season turkey with poultry seasoning, salt and pepper. Add 1 1/2 turns of the pan of oil, 1 1 /2 tablespoons. Brown 6 cutlets 2 minutes on each side, remove to a plate and repeat with remaining pieces of turkey. Add butter to the pan. When it melts, whisk in flour and cook a minute. Whisk in stock or broth and bring up to a bubble. Reduce heat to simmer and slide turkey back into pan to finish cooking in gravy.
  • To a second skillet over medium high heat, combine oil and butter. When butter melts into oil, add celery and onions and season with salt, pepper, poultry seasoning. Saute 5 minutes until just tender, add sage, parsley, prosciutto and stir to combine. Crumble muffins into the pan. Moisten stuffing with broth and heat through. Remove from heat. Cover with foil to keep warm.
  • Use an ice cream scoop to mound stuffing on plates and top with 2 cutlets and a small ladle of gravy.

Salt and freshly ground black pepper
2 teaspoons poultry seasoning
Flour, for dredging
2 eggs, beaten
1 1/2 cups bread crumbs
A couple handfuls fresh parsley leaves, chopped
3 to 4 ribs celery from the heart with leafy tops, finely chopped
4 scallions, whites and greens, chopped
1 Gala or Golden Delicious apple, chopped
1/4 pound small button mushrooms, wiped clean and very thinly sliced
2 lemons
5 to 6 tablespoons extra-virgin olive oil, eyeball the amount
4 thin slices brioche or challah, toasted
Softened butter, for toast, plus 3 tablespoons for gravy
3 to 4 sprigs fresh thyme, leaves stripped and finely chopped
1 1/2 cups cloudy apple cider
3 tablespoons all-purpose flour
2 cups turkey stock or chicken stock
1 teaspoon Worcestershire sauce

Steps:

  • Season the turkey with salt and pepper and poultry seasoning. Set up a breading station of flour, then egg then bread crumbs. Bread cutlets and reserve them.
  • Combine parsley, celery, scallions, apple, mushrooms and dress with salt, pepper, the juice of 2 lemons, 3 tablespoons olive oil. Butter toasted bread then chop into 1/4 inch dice. Toss bread and thyme into salad. Dampen the stuffing salad a bit with apple cider or juice and toss to combine.
  • Melt 3 tablespoons of butter over medium heat in medium saucepan. Add flour and cook 1 minute then whisk in stock, season with salt and pepper and Worcestershire and thicken stock a few minutes over medium-low heat.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat, cook cutlets 10 minutes turning once. If the pan is too small to cook all 4, reserve 2 under foil and add another tablespoon olive oil and cook off remaining cutlets.
  • Serve cutlets on raw stuffing salad and top with warm gravy.

Salt to taste, if desired
Freshly ground pepper to taste
2 tablespoons flour
2 tablespoons olive oil
2 tablespoons butter
1 tablespoon finely chopped shallots
1/4 cup dry Marsala or sherry wine
4 very thin slices prosciutto, about 2 ounces
4 very thin slices Gruyere or Swiss cheese, about 2 ounces

Steps:

  • Put the turkey slices on a flat surface and pound lightly with a flat mallet. Each should be about 1/4-inch thick.

1 1/2 pounds turkey breast (skinless and boneless)
2 tablespoons sweet butter
1 tablespoon vegetable oil
3/4 cup all-purpose flour
Salt and pepper to taste
1 cup dry white wine
1 lemon
1 cup grated mozzarella cheese
3 slices prosciutto
3 pats butter

Steps:

  • Preheat the oven to 400 degrees.
  • Cut the turkey breast, lengthwise, into three fillets of roughly equal thickness (each should be about half an inch thick).
  • Melt butter and oil in a skillet large enough to hold all the fillets. In a bowl combine flour and salt and pepper to taste.
  • When the butter foam stops sizzling, dredge the turkey fillets in the flour, shake off excess and place in the pan. Saute them for about 2 to 3 minutes a side. Remove and keep them warm in the oven.
  • Deglaze the pan with the wine and juice from half the lemon. Let liquid reduce by a third. Pour a few tablespoons of the liquid into the bottom of a baking dish large enough to hold all 3 fillets.

Put a pat of butter over each and place them in a preheated 400-degree oven for about five minutes. Before serving pour any remaining liquid from the dish over the fillets and finish off with freshly squeezed lemon.
