When we were first married, I didn't have an oven, so I made this tender turkey in the slow cooker. These days, I rely on this recipe because it frees up the oven to make other dishes for large get-togethers. -Myra Innes, Auburn, Kansas

TURKEY CUTLETS WITH MUSHROOM WINE SAUCE
A light, healthy favorite of ours. Even my picky husband loved it! Using Fiber One cereal in place of breadcrumbs bumps up the nutrition and with the addition of seasoning, it was hard to tell the difference. You could easily substitute chicken breasts or pork chops. The sauce is excellent over brown rice or quinoa.

Tips:
- Choose the Right Cutlets: Select thin-cut turkey cutlets for quick and even cooking.
- Tenderize the Cutlets: Pounding the cutlets gently with a meat mallet helps tenderize and flatten them, ensuring they cook evenly.
- Season and Coat the Cutlets: Season the cutlets with salt, pepper, and your favorite herbs before coating them in flour. This adds flavor and helps the sauce adhere.
- Use a Large Skillet: Opt for a large skillet to prevent overcrowding and ensure the cutlets have enough space to cook without steaming.
- Cook in Batches: If cooking multiple cutlets, cook them in batches to avoid overcrowding the skillet. This ensures even cooking and prevents the cutlets from releasing too much moisture.
- Make the Sauce Separately: Prepare the mushroom sauce while the cutlets are cooking. This allows the flavors to develop fully and prevents the sauce from overpowering the cutlets.
- Add Fresh Herbs: Enhance the flavor of the sauce by adding fresh herbs like thyme or parsley towards the end of cooking. This adds a vibrant aroma and freshness.
