2 Tablespoons whipped cream cheese
2 Tablespoons Raspberry Cranberry Sauce or any cranberry sauce, but this Raspberry Cranberry Sauce is the best.
Leafy Green Lettuce
Turkey - hot or cold. I prefer cold.

Steps:

  • Cut Croissant in half. Spread one side generously with cream cheese. Spread the other side generously with cranberry sauce. Add Lettuce and turkey. Fold over and devour.

2 slices cooked turkey
2 slices cooked bacon
1 slice provolone cheese
1 tablespoon mayonnaise
2 tablespoons whole cranberry sauce
1 teaspoon red onion, finely chopped
2 slices wheat bread (or your choice)
2 teaspoons butter (for grilling)

Steps:

  • Chop red onion very fine and mix with whole cranberry sauce.
  • Smear mayonnaise on one side of sliced bread. Smear cranberry-onion mixture on the other slice of bread.
  • Layer turkey slices, bacon and provolone on one side of bread and top with other slice of bread.
  • Using a skillet or grill pan, grill sandwich with butter and remove from heat when cheese has melted. Cut sandwich into 2 halves and serve.

1 pound sliced leftover turkey meat
1 cup Cranberry BBQ Sauce, recipe follows
4 hoagie rolls, buttered
4 thick slices fontina
Fried Shallots, recipe follows
Two 14-ounce cans cranberry sauce
1 cup orange juice
1/2 teaspoon ground ginger
Pinch ground cinnamon
Pinch kosher salt
1 cup tomato puree
3 tablespoons apple cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1/2 teaspoon fresh ground black pepper
1/4 teaspoon hot sauce, such as Tabasco
4 cups canola oil
2 tablespoons all-purpose flour
Kosher salt and freshly ground black pepper

4 shallots, peeled and thinly sliced

Steps:

  • Preheat the broiler.
  • Add the turkey and Cranberry BBQ Sauce to a large bowl and toss to coat. Pile the turkey on the rolls and top with the cheese. Place the sandwiches on a baking sheet and place under the broiler until the cheese melts and is bubbly. Top the sandwiches with the Fried Shallots and serve.
  • Add the cranberry sauce, juice, ground ginger, cinnamon and a pinch of salt to a small saucepan. Bring to a boil and reduce to a simmer. Cook uncovered, stirring often to incorporate flavors, about 15 minutes. Remove the saucepan from the heat and cool. Reserve 1 cup and store the rest for future use.
  • Combine the tomato puree, 1 cup of the cranberry sauce, vinegar, Worcestershire, mustard, 1/2 teaspoon salt, pepper and hot sauce in a medium saucepan. Bring to a boil, reduce the heat and simmer uncovered, stirring frequently until all ingredients are well incorporated, 8 to 10 minutes.
  • Heat the oil to 375 degrees F in a high-sided skillet or pan. Put the flour in a small bowl and sprinkle with salt and pepper. Add the shallots to the bowl and toss to coat, shaking off any excess flour. Fry the shallots in batches until golden brown, 2 to 3 minutes. Transfer the shallots to a paper-towel-lined-plate and sprinkle with salt.

2 slice bread
2 Tbsp cream cheese, softened
2 Tbsp cranberry sauce (I use my homemade cranberry relish)
1 Tbsp low-fat mayonnaise (optional--I usually omit it, but most of my family prefers it)
2 slice cooked turkey (great use of your leftover thanksgiving turkey)
1/2 tsp salt
1/2 tsp black pepper
1 romaine lettuce leaf

Steps:

  • 1. Lightly toast both slices of bread. Spread cream cheese on both halves while bread is still hot, so the cream cheese melts justly slightly. Add mayonnaise, if you wish.
  • 2. Spread cranberry sauce on both slices of toasted bread with cranberry sauce (or cranberry relish).
  • 3. Top one toasted slice with cooked turkey meat and season with salt and pepper. Then top with Romaine lettuce leaf. Place the other slice of bread over the Romaine lettuce. Cut the sandwich in half diagonally.
  • 4. Serve with re-heated leftover Thanksgiving stuffing or re-heated mashed potatoes and gravy.

When I was a kid, my favorite meal was Thanksgiving Turkey Dinner so my mom often did a semi-Thanksgiving dinner for me in the summer near my birthday. I tend to do something similar, where I brine and roast a small turkey every few months. We typically don't do a full blown Thanksgiving dinner but incorporate the meat into other meals. This recipe is one that I made one summer for a girls Scrapbooking Party luncheon with my turkey and all of the beautiful basil in my backyard garden. As usual, my measurements may be slightly off so feel free to mix it up a bit to make this recipe fit your taste.

1 baguette, sliced in half lengthwise
1/2 cup pesto sauce, as fresh as possible
4 small heirloom tomatoes, sliced
1/4 cup dried cranberries, roughly chopped
1/2 cup butter lettuce leaf

8 ounces havarti cheese, sliced

Steps:

  • Build the sandwich by first spreading pesto on both sides of the bread.
  • Layer turkey, lettuce, tomatoes, cranberries, and cheese on to the bottom piece of bread. Add the top. Slice into 6-8 little sandwiches.

  • Note1: I like to prepare fresh pesto straight from my garden the traditional way using lots of fresh basil, lemon juice, toasted pine nuts, garlic, Olive Oil, and salt/pepper.
  • Note2: When preparing the turkey, tomatoes, lettuce, and cheese, ensure the sizes fit the size of your bread. For a small baguette, they need to be fairly small.
  • Note3: Place the Cranberries directly on the Pesto. They will stick into the sandwich better this way.
  • Note 4: It is important to use good quality turkey. I prefer to roast my own after soaking in a basic brine for 24-48 hours. If you don't have the time to do this, use your favorite good quality deli cut.

1/2 cup Cranberry Apple Glaze, recipe follows
2 tablespoons Greek yogurt
2 scallions, white and green parts thinly sliced
1/2 jalapeno, seeded and minced
2 tablespoons whole-grain mustard
1 tablespoon honey
1 tablespoon Dijon mustard
4 focaccia rolls, split lengthwise
4 leaves green curly lettuce
4 ounces leftover turkey, sliced
1 cup leftover stuffing, optional
Pickle spears, for serving
2 cups apple cider
2 cups cranberries
1 cup cranberry juice
1/2 cup maple syrup
1/2 cup apple cider vinegar
Kosher salt and freshly ground pepper

Steps:

  • Combine the Cranberry Apple Glaze, yogurt, scallions and jalapenos in a small bowl. Whisk together the whole-grain mustard, honey and Dijon mustard in another bowl until smooth.
  • To assemble the sandwiches, spread the honey mustard on the bottom halves of the rolls, and spread a generous amount of the spicy cranberry cream on the top halves. Top each bottom half with 1 lettuce leaf, 1 ounce turkey and 1/4 cup stuffing, if using, and then place the spicy cranberry cream halves on top. Slice the sandwiches in half and serve with a pickle spear.
  • Combine the apple cider, cranberries, cranberry juice, maple syrup and apple cider vinegar in a small saucepan.
