1/2 cup diced yellow onion
2 cloves garlic, minced
1/4 cup diced jalapeno peppers, with seeds
1 9-ounce jar orange marmalade (with peel)
1 tablespoon dijon mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon chili powder
6 hamburger buns or kaiser rolls
Romaine lettuce, sliced tomato and sliced red onion, for topping
Kosher pickles, for serving

Steps:

  • Prep the burgers: Combine the salt, paprika, pepper and granulated garlic in a small bowl. Form 6 turkey patties and sprinkle on both sides with the seasoning mixture.
  • Make the glaze: Heat the vegetable oil in a medium skillet over medium-high heat. Add the onion, garlic and jalapenos and saute until the onion is translucent, about 10 minutes. Add the marmalade, mustard, black pepper and chili powder and cook about 2 minutes, until fully combined. Reserve until ready to use.

1 tablespoon honey mustard
1 cup dry breadcrumbs
1/4 teaspoon salt

1 medium tomatoes, Sliced
1 large avocado, peeled and sliced
4 kaiser rolls or 4 , your choice
mustard, sauce
1/3 cup mayonnaise
2 tablespoons honey mustard

Steps:

  • In a large bowl combine, first six ingredients.
  • Shape turkey mixture into patties.
  • Add the oil to a skillet on the stove, heat on medium heat.
  • Add patties, fry on one side for 10 to 12 minutes than flip over and repeat. (Keep a check on the turkey patties to keep from burning them. Flip earlier if needed)

Grill seasoning (recommended: Montreal Steak Seasoning)

Steps:

  • Preheat grill over medium-high heat.

1/2 cup pecans, coarsely chopped
1 1/2 lbs ground turkey
2/3 cup gorgonzola, crumbled
1 teaspoon onion powder

cooking spray
2 cups Baby Spinach
1/2 cup whole berry cranberry sauce
1/2 cup Dijon mustard
1/8 teaspoon dried red pepper, crushed

Steps:

  • Make cranberry mustard sauce first by mixing together all ingredients. Makes about 3/4 cup.
  • Wrap buns in foil.
  • Place pecans on a baking sheet.
  • Bake the buns and pecans for 8 minutes at 350 degrees F. Remove pecans from the oven but leave the buns inches.
  • In a large bowl, combine the ground turkey with the next 4 ingredients. Blend well. Shape into 6, 3/4" thick patties.
  • Cook patties in a large skillet coated with cooking spray over medium heat, 6 minute per side or until done.

1/4 cup finely minced shallots
1 1/2 pounds ground turkey
2 tablespoons finely chopped parsley
2 tablespoons Dijon mustard
1/4 cup dry bread crumbs
1 tablespoon brandy
1/4 cup chicken stock
Salt and freshly ground black pepper

Steps:

  • Heat one tablespoon of the oil in a heavy skillet. Saute the shallots over medium heat until they begin to turn golden. Remove the pan from the heat, scrape half the shallots into a mixing bowl and reserve the rest in a small dish.
  • Add the turkey, one tablespoon parsley, one tablespoon mustard and the bread crumbs to the bowl. Mix until the ingredients are well blended. Shape the mixture into eight patties of equal size, each about three-fourths of an inch thick.
  • Heat the remaining oil in the skillet. Add the patties and saute over medium heat about 10 minutes, turning them once, until they are cooked through. Remove the patties to a warm platter and cover with foil.
  • Return the reserved shallots to the pan and stir in the remaining mustard along with the brandy and stock. Cook, stirring, a minute or two until the sauce thickens slightly. Season to taste with salt and pepper and stir in the remaining parsley.
