8 ounces lean ground turkey
1 small onion, chopped
1 garlic clove, minced
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes with mild green chiles
1-1/2 cups water
1/2 cup frozen corn
1 tablespoon chili powder
1 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon salt
1 cup bulgur
TOPPING:
1/2 cup fat-free plain Greek yogurt
1 tablespoon finely chopped green onion
1 tablespoon minced fresh cilantro

1 cup fine bulgur
1 cup grated Gouda
1/2 cup pitted prunes, chopped
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
Kosher salt and freshly ground black pepper
2 tablespoons apricot preserves
2 teaspoons soy sauce
1 teaspoon ground ginger
1 teaspoon apple cider vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.

1 tbsp olive oil
1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

1 c coarse or medium bulgur
3/4 c tomato juice
2 Tbsp olive oil, extra virgin
2 eggs
2 clove garlic..minced
1/4 tsp allspice, ground
1/4 tsp cumin ground
1 onions, yellow, medium fine chopped
1 c grated carrot
11/2 c grated zucchini
1 lb ground turkey
1/2 c chopped sweet red pepper
1/2 c ketchup or chili sauace
2 clove garlic minced
1/4 tsp cayenne pepper

Steps:

  • 1. MEAT LOAF....In bowl stir together tomato juice and bulgur and let stand for 30 minutes. In separate bowl mix together.eggs. oil, garlic and spices...add turkey, vegetables and bulgur..make sure they are well combined.
  • 2. Grease two. pans { 9x5x2 ..add turkey mix to the 2 pans and bake in 350F oven for 30 minutes.
  • 3. While turkey loaf is baking..mix together the ketchup or chili sauce, and garlic and cayenne pepper ..after 30 minutes of baking spread the sauce mixture over loaves and bake an additional 50 minutes or check center with thermometer to reach 185 degrees.
  • 4. This freezes very well.

Tips:

  • For a vegetarian version of the bulgur loaf, substitute crumbled tofu or tempeh for the ground turkey.
  • To make the loaf ahead of time, prepare it as directed through step 6 and let it cool completely. Wrap it tightly in plastic wrap and refrigerate for up to 3 days, or freeze for up to 2 months. To serve, thaw the loaf overnight in the refrigerator or at room temperature for several hours. Then, slice and toast or grill until heated through.
