Provided by Alton Brown

Categories     Thanksgiving     Turkey     Poultry     Christmas     Fall     Christmas Eve     Winter

Yield At least 10-12 servings

Number Of Ingredients 17

For Turkey Brine
One 14-16-pound frozen natural, young turkey
1 gallon vegetable broth (homemade or canned)
1 cup kosher salt
½ cup brown sugar
1 tablespoon black peppercorns
1½ teaspoons allspice berries
1½ tablespoons candied ginger, chopped
1 gallon H2O, iced
For Roasting
1 red apple, quartered
½ onion, quartered
1 stick cinnamon
1 cup H20
4 sprigs rosemary
6 sage leaves
Canola oil

Steps:

  • Two to three days before roasting, thaw the turkey in the refrigerator or in a cooler kept at 38° F, tops.
  • To make the turkey brine: Combine the broth, salt, sugar, peppercorns, allspice, and finger in a large stockpot and bring to a boil over medium-high heat. Stir until the salt and sugar dissolve. Remove from the heat. Cool to room temperature, then refrigerate the brine.
  • The eve before roasting, combine the brine and the iced water in a cooler. Place the thawed turkey (guts, neck, and whatnot removed) breast side down in the brine. Seal up the cooler and use it as an ottoman. Target bring time: 12 hours; flip the bird once about halfway through.
  • On roasting day: Heat the oven to 500°F. Remove the bird from the brine and rinse inside and out. Discard brine.
  • Place the bird on a roasting rack and place inside a roasting pan. Pat the bird dry (inside and out) with paper towels.
  • Combine the apple, onion, cinnamon, and water in a microwave-safe bowl. Microwave on high for 5 minutes. Add to the turkey's cavity, along with the rosemary and sage. Truss, if you like.
  • Lightly coat the bird with canola oil. Roast the bird on the lowest rack of the oven for 30 minutes.
  • Insert a probe thermometer into the thickest part of the breast and reduce the oven temperature to 350°F.
  • Roast until the thermometer registers 155°F, about 2½ hours.
  • Remove from the oven, cover closely with aluminum foil, and let rest for a least 15 minutes before carving.

DRY BRINE TURKEY

Dry Brine Turkey image

Dry brining is the easiest way to get a moist and flavorful turkey on the table for your Thanksgiving dinner. Plan ahead, you'll need a few days to get the most flavor. I found that salt and pepper was enough for me, but feel free to season with other aromatics before roasting.

Number Of Ingredients 7

1 tablespoon black peppercorns
2 sprigs fresh thyme
3 bay leaves
4 -6 cloves garlic, sliced
4 cups water
1/2 cup light brown sugar, packed
1/2 cup kosher salt

  • Stir ingredients together in a saucepan and bring to a boil.

  • Prepare meat as desired- roast, bbq, etc.

KITTENCAL'S BEST BROWN SUGAR TURKEY BRINE

Kittencal's Best Brown Sugar Turkey Brine image

This brine is enough for up to a 20-pound whole turkey and will produce the most juiciest and delicious bird you will ever have, with this brine you will taste only the turkey not any extra herbs or flavorings that are added in to some brines --- I use my food-safe picnic cooler to brine my turkey in it works quite well, you might want to purchase one if you plan on brining your turkey on a regular basis, and you will once you have tried this method just make certain to purchase one that is food-safe --- you may omit the garlic but I strongly suggest to add it --- you must use only kosher salt not regular table salt --- if desired after brining continue with my recipe#199612

APPLE-SPICE BRINE FOR TURKEY BREAST

Apple-Spice Brine for Turkey Breast image

This is the recipe I developed for a turkey breast destined for my stove-top smoker. I'll never make another turkey breast without using this method. It was so moist and flavorful! UPDATE: Just smoked a large turkey breast on the stove top using an enamel roasting pan, with lid. I made a small tray of aluminum foil for the wood chips and placed at one end on the bottom of the roaster . Placed a sheet of heavy duty foil on top of wood chips as a drip tray (turned up corners to catch juices). Then placed a small rack (I used a collapsible steam basket) on top of the foil to hold the meat. Once smoke started, I placed the roaster lid on top and then crimped heavy duty foil over the top. Worked perfectly! Besure to run the vent on the stove or open a window slightly. The smell within the house was heavenly!

3 large bay leaves
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 sprigs fresh sage
1 tablespoon black peppercorns
8 cups apple cider
4 cups ice
1 cup apple cider vinegar

Steps:

  • Pour water into a large stockpot and bring to a simmer over medium-high heat. Add salt and honey and stir to dissolve. Remove pot from the heat and stir in apple slices, onion, garlic, bay leaves, rosemary, thyme, sage, and peppercorns. Let brine cool to room temperature. You can set the pot in a sink full of ice water to speed up the cooling process.

Tips:

  • Choose the right turkey: Select a fresh or thawed turkey that is the appropriate size for your needs. A good rule of thumb is to allow 1 pound of turkey per person.
  • Prepare the brine: Follow the recipe carefully to create a flavorful brine. Use a large container that can accommodate the turkey and enough brine to cover it completely.
  • Brine the turkey: Submerge the turkey in the brine and refrigerate for the recommended time. The longer you brine the turkey, the more flavor it will absorb.
  • Rinse and pat dry: After brining, rinse the turkey thoroughly with cold water and pat it dry with paper towels. This will help the skin crisp up during roasting.
  • Season the turkey: Rub the turkey inside and out with your favorite seasonings before roasting. This will enhance the flavor of the meat.
  • Roast the turkey: Place the turkey on a roasting rack in a preheated oven and roast according to the recipe instructions. Use a meat thermometer to ensure that the turkey is cooked to a safe internal temperature.
  • Let the turkey rest: Once the turkey is cooked, let it rest for 15-20 minutes before carving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful turkey.

Conclusion:

Brining a turkey is an excellent way to ensure a moist and flavorful Thanksgiving feast. By following these tips, you can create a delicious and memorable turkey that your family and friends will love. So, gather your ingredients, prepare your brine, and get ready to experience the best turkey you've ever tasted!
