Yield Makes about 6 tablespoons

Number Of Ingredients 4

3 tablespoons coriander seeds
1 1/2 tablespoons cumin seeds
1 tablespoon caraway seeds
1/2 tablespoon crushed red pepper flakes

Steps:

  • Finely grind coriander seeds, cumin seeds, caraway seeds, and crushed red pepper flakes in a spice mill. DO AHEAD: Can be made 1 month ahead. Store airtight at room temperature.

Tips:

  • Use the right spices. The key to a flavorful Tunisian rub is using the right spices. The most common spices used in Tunisian rubs are cumin, coriander, paprika, garlic powder, and chili powder. You can also add other spices to taste, such as turmeric, ginger, or cinnamon.
  • Toast the spices. Toasting the spices before using them will help to release their flavor. You can toast the spices in a dry skillet over medium heat for a few minutes, or you can place them in a baking dish and toast them in the oven at 350 degrees Fahrenheit for 10-15 minutes.
  • Use a mortar and pestle. A mortar and pestle is the best way to grind the spices into a fine powder. If you don't have a mortar and pestle, you can use a spice grinder or a blender.
  • Rub the spices on the meat. Once the spices are ground into a powder, rub them all over the meat. Make sure to get the spices into all of the nooks and crannies. You can also use a pastry brush to apply the spices.
  • Let the meat marinate. After you have rubbed the spices on the meat, let it marinate for at least 30 minutes. This will allow the spices to penetrate the meat and give it more flavor.

Conclusion:

Tunisian rub is a flavorful and versatile spice blend that can be used on a variety of meats. It is easy to make and can be customized to your own taste. Whether you are grilling, roasting, or frying your meat, Tunisian rub will add a delicious flavor that your family and friends will love.
