- In a small skillet, saute onion in oil until tender. In a microwave-safe dish, whisk together water and soup mix. Microwave, uncovered, on high for 1-1/2 to 2 minutes, whisking occasionally. Add soup to sauteed onions. Stir in the broccoli, tuna, milk, salt and lemon-pepper; bring to a boil. Reduce heat; simmer for 5 minutes or until broccoli is tender. Stir in rice. - Put cauliflower in a 2 1/2 quart casserole with a lid.
- Add 3 tablespoons of water, cover and microwave on HIGH 8-10 minutes until just tender, stirring every couple minutes (do not overcook); stir in 1 tablespoon butter.
- Meanwhile, sauté the celery in remaining tablespoon of butter until very tender.
- In medium microwaveable bowl, mix 6 ounces of the cheese and cream.
- Microwave a 2 minutes to melt the cheese; stir until well blended.

- 1. Preheat oven to 350 degrees F.
- 2. Spray casserole dish with cooking spray.
- 3. Bring water to boil, add rice, cover and remove from heat; let sit until liquid is absorbed.
- 4. Mix together soup and milk from the soup can; stir until smooth. Add tuna, celery, onion, parsley and pepper.
- 5. Pour soup mixture over rice, mix to combine all ingredients. If mixture is too dry add a little more milk, you want it creamy but not soupy.
