I love Tuna melts. I also love Texas toast with cheese. I decided to combine my Tuna patty with the Texas toast,and the combination is delicious. This is a great sandwich for lunch,or a light dinner. Enjoy friends!!

6-ounce can chunk white tuna packed in water like bumble bee
1/4 tsp dried parsley
1/8 tsp paprika
1 dash of salt and pepper
3 Tbsp hellmans mayonnaise or other
2 tsp parmesan cheese
1 tsp sweet relish
8 ritz crackers crushed in to crumbs
1 Tbsp of a beaten egg white
1 medium stalk of celery finely chopped
3 Tbsp finely chopped onion
BREAD AND TOPPING
4 frozen slices of garlic texas toast with cheese. ( i use new york brand)
lettuce (i use romaine)
2 slices of tomato
2 slices of american, cheddar cheese orchoice of cheese
2-3 tsp tarter sauce for top of fish optional

Steps:

  • 1. mix all ingredients together for tuna. split mixture in half for 2 patties.
  • 2. toast the Texas toast in oven at 425. While toasting. Slice the tomato,and get your lettuce. heat fry pan with a bit of olive oil,or vegetable oil .
  • 3. Take tuna and gently make in to a thick size patty to fit on toast. place in fry pan with oil. Cook on each side about 2 minutes with out disturbing.
  • 4. Place patty on Texas toast with the Cheese inside. Place a slice of cheese on top of tuna.Place under broiler until cheese melts. Add lettuce and tomato, and top with 2nd slice of toast.
  • 5. Note: Make it really yummy! Top sandwich with tarter sauce if desired. Yummy touch!!

1 can(s) tuna, packed in water
1/4 c 100% egg whites
2 Tbsp diced onion
1/4 c chopped spinach
1 c baby spinach
1/8 c low fat mozzarella cheese

  • 1. Mix tuna, egg whites, diced onion, and chopped spinach in a small bowl.
  • 2. Cook on stove top, medium heat, in a small pan.
  • 3. Place spinach on plate, place patty on spinach, sprinkle cheese on top. =) Bon apetit.
