HARD TIMES CREAMED TUNA

Hard Times Creamed Tuna image

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

When we were kids, my mother was on a shoe string budget. By the end of the week the cupboards were getting bare and she would have to throw something together for us to eat. This was usually what she would throw together. Its quick and easy and most kids love it if they like tuna! Even my husband and my son enjoy this one!

1 can(s) chunk light tuna (the firm chunk kind)
1 can(s) cream of mushroom soup

dash(es) pepper

Steps:

  • 1. In a sauce pan combine the cream of mushroom soup, dash of pepper and peas. Heat on low setting so not to scald and burn.

Number Of Ingredients 3

1 can tuna fish, drained
1 can cream of mushroom soup
1 can peas (optional)

Steps:

Tips:

  • Use high-quality canned tuna. Look for tuna that is labeled "solid white albacore" or "light tuna." Avoid tuna that is labeled "flaked" or "shredded," as these are lower quality.
  • Drain the tuna well before using it. This will help to prevent the toast from becoming soggy.
  • Mash the tuna with a fork before adding it to the toast. This will help to create a smooth and creamy spread.
  • Add your favorite seasonings to the tuna. Common seasonings include salt, pepper, lemon juice, and mayonnaise. You can also add chopped herbs, such as parsley or dill.
  • Toast the bread before adding the tuna. This will help to create a crispy and flavorful base for the tuna salad.
