Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

TUNA LOAF

Tuna Loaf image

I was looking for a tuna loaf recipe and found Carol Junkins 'Tuna Cakes~Flavors of Cape Cod.' I made few changes and additions, and on Carol's suggestion, here it is. Loaf will be on the dry side, since it's tuna and therefore, no fat, so you may want to serve with tartar sauce, a dill mayo, or any of your choice.

CAUSA DE ATúN - TUNA FISH POTATO LOAF RECIPE - (4/5)

Causa de atún - Tuna Fish Potato Loaf Recipe - (4/5) image

Provided by á-36161

Number Of Ingredients 11

1 1/2 kg potatoes
1 small red onion
1 450 gr can of tuna in oil
5 limes
3 teaspoons powdered yellow chili or any chili blended with a bit of oil into a paste, to taste
2 teaspoons salt
2 avocados
1/2 - 3/4 cup mayonnaise
2 eggs
black olives (optional)
chopped coriander or parsley (optional)

Steps:

  • Boil the potatoes with the skin on in salted water until tender. Peel them and mash them while still hot. Let the mash cool down. In the meantime, chop the onion and place it in a bowl with water. Boil the eggs and slice them. Mix the mash with the juice of 3 limes, the chilli and salt. Taste and adjust seasoning. Drain the onion, drain the tuna, and mix both with the juice of 2 limes. Lightly oil a baking dish or baking tray with a mousse ring on top. Using a spoon or spatula, spread half of the mash and even it out. Spread a thin layer of mayonnaise on top of the mash. Slice the avocadoes and arrange them on top. Spread the tuna mix on top. Spread the rest of the mash and even it out. Spread another thin layer of mayonnaise and arrange the boiled egg slices. If using olives, scatter them around the egg slices. If using herbs, sprinkle them on top.

Tips:

  • Choose high-quality ingredients: Use fresh, canned, or frozen tuna that is packed in water or oil. Look for tuna that is flaked or chunk light, as these will be easier to work with.
  • Use a variety of seasonings: Don't be afraid to experiment with different herbs, spices, and vegetables to flavor your tuna loaf. Some good options include onion, celery, bell pepper, garlic, parsley, and thyme.
  • Bind the ingredients together: Use a binder such as eggs, bread crumbs, or crackers to help hold the tuna loaf together. You can also use a combination of these ingredients.
  • Bake the tuna loaf until it is cooked through: The internal temperature of the tuna loaf should reach 165 degrees Fahrenheit (74 degrees Celsius) when it is done.
  • Let the tuna loaf cool before slicing: This will help it to hold its shape and make it easier to slice.

Conclusion:

Tuna loaf is a versatile and delicious dish that can be enjoyed for lunch, dinner, or as a snack. It is a great way to use up leftover tuna, and it can be customized to suit your own taste preferences. With a little creativity, you can create a tuna loaf that is both healthy and satisfying.
