6 cans (5 ounces each) white water-packed tuna, drained and flaked
1 large red onion, chopped
2 medium tomatoes, chopped
2/3 cup reduced-fat mayonnaise
2 jalapeno peppers, seeded and finely chopped
1/4 cup lemon juice
2 garlic cloves, minced
1 teaspoon seafood seasoning
1 teaspoon coarsely ground pepper
2 loaves (14 ounces each) ciabatta bread, split
3/4 pound sliced pepper Jack cheese
12 lettuce leaves

Steps:

  • In a large bowl, combine the first nine ingredients; spread over bread bottoms. Layer with cheese and lettuce. Replace bread tops. Cut each loaf into six slices.

150 g long grain rice
1 onion
3 teaspoons cooking oil
150 g mushrooms
1 green pepper
50 g frozen peas
400 g tomato soup
1 pinch salt and pepper
1 garlic clove
185 g tuna

Steps:

  • Wash the rice and boil.
  • Peel and slice the onion and fry it gently in the butter or oil in a saucepan, until soft (2 to 3 minutes).
  • Wash and slice the mushrooms and pepper. Add them to the onion and fry gently, until soft (2 minutes). Add the peas, tomato soup, salt, pepper and garlic Gently stir in the drained tuna and cook for a few minutes, until hot.
  • Drain and fork the rice. Spoon the rice onto a plate, press into a ring and pour the tuna sauce into the middle.

2 can(s) albacore tuna (7 oz. each) drained
3 Tbsp red onions, diced
3 Tbsp cilantro, fresh, chopped
1 Tbsp lime juice
1 Tbsp olive oil, extra virgin
1 c cherry tomatoes, quartered
1 c mayonnaise
1 can(s) fire roasted diced chilies (4 oz. can)
1 tsp mrs. dash fiesta lime seasoning
1 large avocados, diced
4 margarita glasses for serving

Steps:

  • 1. Mix together tuna, onion, cilantro, lime juice, and olive oil. Then gently fold in avocado.
  • 2. Put mayonaise and chilies into blender and pulse until creamy.
