1/3 c coarsely chopped water-packed artichoke hearts
2 Tbsp fat free-mayonnaise
1/2 c mexican blend shredded cheese -reduced fat
1/4 tsp salt free lemon pepper seasoning
1/8 tsp dried oregano
2 english muffins, split and toasted

Steps:

  • 1. In a small bowl combine tuna,artichokes,mayonnaise,1/4 cup cheese,lemon-pepper and oregano. Spread over English muffin halves.
  • 2. Place on a baking sheet. Broil 4-6" from heat for 3-5 minutes or until heated through.Sprinkle with remaining cheese; broil 1-2 minutes longer or until cheese is melted.

Tips:

  • For the best results, use fresh tuna steaks. If using frozen tuna, thaw it completely before cooking.
  • To make sure the tuna is cooked evenly, use a meat thermometer to check that it has reached an internal temperature of 145°F (63°C) before removing it from the heat.
  • If you don't have a meat thermometer, you can also check if the tuna is cooked by gently pressing on it with a fork. If the tuna flakes easily, it is cooked through.
  • To make the artichoke spread, use canned artichoke hearts that have been well-drained.
  • For a creamier spread, add a tablespoon of mayonnaise or sour cream to the artichoke mixture.
  • If you don't have any lemon juice on hand, you can also use white wine vinegar or apple cider vinegar.
  • To make the tuna melts, use a sturdy bread that will hold up to the filling.
  • For a more decadent tuna melt, use a cheese that melts well, such as cheddar, mozzarella, or Gruyère.
  • Serve the tuna melts immediately, while the cheese is still melted and gooey.

Tuna melts are a classic comfort food that are easy to make and loved by people of all ages. With a few simple ingredients, you can create a delicious and satisfying meal that is perfect for lunch or dinner.
