Time 1h10m

Yield about 4 cups

Number Of Ingredients 9

6 ripe avocados
3 limes, juiced
1 medium yellow onion, chopped
1 garlic clove, smashed then minced
2 serrano chiles, cut into rounds
1 big handful fresh cilantro with stems, about 1/2 cup, finely chopped
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Halve and pit the avocados. With a tablespoon, scoop out the flesh into a mixing bowl. Mash the avocados using either a fork or potato masher, leaving them still a bit chunky. Add the remaining ingredients, and fold everything together. Drizzle with a little olive oil, adjust seasoning with salt and pepper and give it 1 final mix with a fork.
  • Lay a piece of plastic wrap tight on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

WAYNE'S TUCSON GUACAMOLE

Wayne's Tucson Guacamole image

My wonderful late father-in-law taught me his favorite way to make guacamole many years ago. I wasn't too sure about the dill pickle and juice he added, but it is really good. This is the only way I make it, and my hubby too when he is in a cooking mood. We hope you enjoy it.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 7

4 -6 ripe avocados
1 small dill pickle (diced small)
1 medium tomatoes (diced)
1/2 small onion (finely diced)
3 -5 slices canned jalapeno peppers (diced) (optional)
1 tablespoon pickle juice
black pepper, to your taste

Steps:

  • mash avocados or use mixer.
  • add finely minced onion, diced dill pickle, diced tomato and diced pepper slices (optional).
  • mix in 1T miricle whip, 1T dill pickle juice and black pepper.
  • blend well together by hand and chill in the fridge for at least 2 hours.
  • serve as a side for fahitas or with your favorite chips (we use doritos).
  • The dill pickle juice does the same thing as lemon juice--keeping the avocados from turning black.
  • It also gives a very nice flavor, as does the diced dill pickle.
  • If your avocados aren't ripened enough, place in a paper bag a few days before using and this will speed them along.
  • Don't add salt until you serve this dish, as it will draw moisture and make it watery on top.

DADDY'S GUACAMOLE DIP

Daddy's Guacamole Dip image

This is one of my dad's favorite recipes that he's handed down to my sisters and myself. It's a little different from traditional guacamole dip cause of the cottage cheese, but very delicious! Serve with chips or vegetables.

Tips:

  • Choose ripe avocados: The riper the avocados, the creamier and more flavorful your guacamole will be. Look for avocados that are dark green or black in color and yield to gentle pressure when squeezed.
  • Use fresh ingredients: The fresher the ingredients, the better your guacamole will taste. Use freshly squeezed lime juice, chopped cilantro, and diced onions.
  • Don't over-mash the avocados: Guacamole should have a slightly chunky texture. If you over-mash the avocados, it will become too smooth and lose its flavor.
  • Season to taste: Guacamole should be seasoned with salt, pepper, and cumin to taste. You can also add other spices, such as chili powder or garlic powder, to your liking.
  • Serve immediately: Guacamole is best served immediately after it is made. However, it can be stored in the refrigerator for up to 2 days.

Conclusion:

Guacamole is a delicious and versatile dip that can be enjoyed with a variety of foods. It is a popular appetizer, but it can also be used as a topping for tacos, burritos, and other Mexican dishes. With its creamy texture and fresh flavor, guacamole is sure to be a hit at your next party or gathering.
