TRUFFLED DEVILED EGGS
Recipe by Anne Burrell (Secrets of a Restaurant Chef) My mother in law made these and I loved these truffled eggs but hubby thought too much truffle oil so you may want to want to start with less truffle oil and add to taste. She didn't have any of the black truffle peelings so I can't say how they taste with the peelings. You'll need a pastry bag if you choose to pipe the filling rather than spoon it in. Since I didn't make them it's a guess on prep time.

- Whip until very light and fluffy.

Tips:
- Use the freshest eggs possible. Older eggs will not have as rich a flavor and will be more difficult to peel.
- Hard-boil the eggs perfectly. Overcooked eggs will be dry and chalky, while undercooked eggs will be runny.
- Peel the eggs carefully. Do not use too much force or you will tear the egg white.
- Make sure the filling is well-seasoned. Taste the filling before you stuff the eggs and adjust the seasonings as needed.
- Chill the eggs before serving. This will help the filling to set and will make the eggs easier to eat.
Conclusion:
Truffled deviled eggs are a delicious and elegant appetizer that is perfect for any occasion. They are easy to make and can be tailored to your own taste. With a few simple tips, you can make the perfect truffled deviled eggs that will impress your guests.
