4 tilapia fillets (4 ounces each)
1 teaspoon Caribbean jerk seasoning
1 can (15 ounces) mixed tropical fruit, undrained
1/4 cup dried tropical fruit
2 green onions, chopped
1/4 cup red jalapeno pepper jelly
2 tablespoons sliced almonds
2 tablespoons minced fresh mint
1 tablespoon lime juice
Hot cooked rice

Steps:

  • Season fillets with jerk seasoning. In a large nonstick skillet coated with cooking spray, cook fillets over medium-high heat for 3-5 minutes or until fish flakes easily with a fork, turning once. Transfer to a serving platter and keep warm., In the same skillet, combine the fruit, onions, jelly and almonds; heat through. Stir in mint and lime juice. Serve with fish and rice.

4 (3 ounce) tilapia fillets
2 teaspoons lemon juice
1/2 teaspoon Old Bay Seasoning
4 tablespoons blue cheese, crumbled
2 teaspoons parsley flakes
4 tablespoons shredded coconut

Steps:

  • Spray baking dish with cooking spray. Place two fillets in dish, and sprinkle with lemon juice and Old Bay.
  • Top with crumbled bleu cheese. Place the other two fillets on top.
  • Sprinkle with Parsley flakes and a little more Old Bay. Bake for 15 minutes at 375.
  • Remove from oven and top with coconut. Broil for 2 minutes, but watch so that the coconut doesn't burn!

4 tilapia filets
1 lemon
2 tablespoons extra virgin olive oil
1 grind of fresh ground black pepper
for the salsa:
10 kiwi fruit, peeled and diced finely
1 1/2 cups fresh pineapple diced
1 hothouse cucumber chopped into small pieces
3 tablespoons cilantro
1/4 cup of sugar
1/4 cup of white vinegar
1/4 cup of warm water
1/8 cup of light olive oil

Steps:

  • Marinade the tilapia in the extra virgin olive oil, with the lemon fresh squeezed and the dash of fresh ground pepper for approximately one hour. In the meantime, combine kiwi, pineapple, cucumber and cilantro in a large bowl. Next, combine the white vinegar, olive oil, warm water and sugar and wisk until sugar is dissolved. Pour the dressing over the salsa and let sit for at least 45 minutes. Prepare the broiler in the oven and lay the tilapia filet across a lightly oiled pan or tray lined with tin foil. Broil approximately 4-5 minutes on each side depending on how thick the filets are. Do not cook until browned. Fish is done as soon as it turns white on each side. Transfer the filets to each plate or to large dish if for a group. With a slotted spoon, add a generous amount of the salsa over each fish, draining the dressing through the spoon.
