2 c all purpose white flour
1 c granulated sugar
1 tsp baking soda
1/2 tsp salt
1/2 c butter, softened
2 large eggs
1/4 c milk
1 c bananas, mashed
1 Tbsp orange rind, grated
1 tsp vanilla extract
1 tsp almond extract
1 c flaked coconut
1/2 c pecans, chopped
1/2 c pineapple, drained

Steps:

  • 1. Preheat overn to 350 degrees
  • 2. Grease bottom of 5x9 loaf pan
  • 3. In a large mixing bowl, combine flour, sugar, baking soda and salt.
  • 4. Stir in butter, eggs, milk, banans,coconut, pineapple, orange rind, vanilla extract and almond extract.
  • 5. Beat on low speed until all ingredients are moistened.
  • 6. Beat at medium speed for 2 minutes.
  • 7. Stir in Pineapple and coconut.
  • 8. Pour into a prepared pan and bake for 70 minutes or until a wooden toothpick comes out clean when inserted into the center of the bread.
  • 9. When ready, immediately remove the bread from the pan an onto a plate.
  • 10. Cool completely before slicing.

1/2 cup mashed banana
1/4 cup coconut
1 teaspoon vanilla
1/2 cup candied fruit or 1/2 cup candied red cherries

Steps:

  • Blend the flour, sugar, vegetable oil, milk eggs, baking soda, and salt in a mixing bowl with an electric mixer on medium until batter is smooth.
  • Add mandarin oranges, pineapple, banana, coconut, vanilla and candied fruit or cherries and mix with a spoon until blended.
  • Pour batter into 2 greased and floured 5x9 loaf pans.
  • Bake at 350 degrees for 45 minutes or until a toothpick inserted in center comes out clean.
  • Cool on a wire rack.
