3 cups all-purpose flour
1 tsp baking soda
1 tsp kosher salt
1 tsp ground cinnamon
¼ tsp ground nutmeg
2 cups sugar
3 eggs (large, at room temperature)
1 ½ cups canola oil
1 ½ tsp vanilla extract
2 cups bananas (mashed)
½ cup pineapple (finely chopped)
2 cups black walnuts (coarsely chopped and divided)
8 ounces cream cheese (at room temperature)
½ cup unsalted butter (at room temperature)
4 cups confectioners' sugar (sifted)
¼ tsp kosher salt
2 tsp vanilla extract

Steps:

  • Preheat oven to 350° Fahrenheit. Spray 3 (8-inch) or 2 (9-inch) cake pans with nonstick spray and line with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and sugar. In a large bowl, combine eggs, canola oil, vanilla, bananas, pineapple, and 1 cup walnuts. Add flour mixture and mix by hand until all ingredients are well-combined. Pour batter into prepared pans and bake for 25-30 minutes, until a cake tester comes out clean. Remove from oven and cool in pan on wire racks for 10 minutes. Invert cake layers and remove parchment paper; place on racks to cool completely, right side up.
  • In the bowl of a stand mixer, cream the cream cheese, butter, confectioners' sugar, and salt on low setting until combined. Increase speed to medium-high and continue to mix for 4-5 minutes until creamy and light. Add vanilla and mix on high speed an additional minute. Store in refrigerator until ready to use.
  • Place 1 cake layer on a cake board or cake serving plate and cover top with frosting; repeat with second and third layers. Spread remaining frosting around the sides of the cake. Finish the top with the remaining walnuts.

2 purchased angel food cakes (10 to 12 ounces each)
2 containers (16 ounces each) vanilla frosting
1 teaspoon imitation banana extract
Yellow food coloring
1 ripe banana, mashed
2 cups sweetened flaked coconut
1 cup chocolate morsels or chopped chocolate, melted
1 tube store-bought green icing
1 cup fruit-shaped candies
Special Equipment: 1 palm tree decoration, aluminum foil

Steps:

  • Place 1 cake, wide side down, on a serving platter. Stir frosting and banana extract in a large bowl to blend. Stir in yellow food coloring, 1 drop at a time, until desired color is achieved. Transfer 1/2 cup of banana frosting to a medium bowl; stir in mashed banana. Spread mashed banana mixture over top of cake. Cut 1 (2-inch wide) wedge from second cake. Spread 1/4 cup of yellow frosting over cut ends of second cake. Bring cut ends of second cake together, pressing to adhere. Place second cake, wide side down, atop cake on platter. Tear cut cake wedge into cubes. Fill hole in center of cakes with cake cubes. Spread remaining yellow frosting evenly over top and sides of cake to coat completely. Sprinkle cake with coconut, pressing lightly to adhere.
  • Create an island "volcano" mold by shaping aluminum foil into a volcano shape, measuring 2 to 3 inches in diameter. Dip in melted chocolate and let cool and harden. Place the mold on top of the cake. Fill the center of the mold with green icing and smooth out. Place palm tree decoration inside the mold. Arrange fruit-shaped candy decoratively around the palm tree and base of cake.

FOR CAKE:
2 bananas, mashed
20 oz canned pineapple tidbits, drained (reserve 1 tb juice for glaze)
1/2 c sugar
1/2 c light brown sugar, packed
1/2 c butter, softened
1/2 c sour cream
2 eggs, slightly beaten
1/2 tsp vanilla extract
1/2 tsp banan flavoring
1 1/2 c all purpose flour
1 tsp salt
1 tsp baking soda
FOR GLAZE: (OPTIONAL)
2 Tbsp butter melted
1 Tbsp sugar
1 Tbsp spiced rum
1 Tbsp pineapple juice
FOR TOPPING:
2 eggs, slightly beaten
1 1/3 c evaporated milk
1 1/3 c sugar
1/2 c butter
12 oz bag flaked coconut
1/2 c chopped macadamia nuts (you may substitute pecans or walnuts)

Steps:

  • 1. Preheat oven to 350 degrees. In your mixer cream butter and sugars on medium speed until fluffy. Add eggs, mashed banana, pineapple, vanilla and banana extracts, sour cream. Mix on low until well combined.
  • 2. In a separate bowl combine flour, salt and baking soda.
  • 3. Add entire flour mixture and mix on low until combined.
  • 4. Grease and lightly flour 9x13 baking pan. Pour in batter and bake 30 to 35 minutes until done. Set aside to cool.
  • 5. Combine glaze ingredients and mix until sugar has melted. Poke holes on top of cake and brush glaze over cake. You don't have to use the entire amount. I usually end up using about 3/4 of the glaze.
  • 6. In a medium sauce pan add egg, evaporated milk, sugar, and butter. On medium heat cook and stir until thick and bubbling about 6 to 8 minutes. Turn off heat and stir in coconut and macadamia nuts until combined. Cool to room temperature.
  • 7. Spread topping over cake. Refrigerate until ready to serve.

1 box(es) butter recipe cake mix
- all the ingredients called for on back of cake box
8 ounce(s) can of crushed pineapple
2 package(s) instant banana pudding (the 3.4 oz. size)
2 1/4 cup(s) cold milk
1 cup(s) water
THE CREAM CHEESE GLAZE:
4 ounce(s) cream cheese, softened
2 tablespoon(s) unsalted butter, softened
1 1/2 cup(s) sifted powdered sugar
1 teaspoon(s) vanilla extract
2 - 3 tablespoon(s) milk, if needed

Steps:

  • Heat oven to 350 degrees. Prepare the cake as directed on package. Stir in the crushed pineapple.
  • Pour into a greased 9×13 pan. Don't bake yet!!
  • Beat dry pudding mixes, milk, and water with whisk until blended well. Pour pudding mixture over cake batter in pan. Don't spread it. It will not work if you mix it together.
  • Place cake pan on a baking sheet (to catch any over-flow). Bake 55 minutes at 350 degrees.
  • While cake is in the oven, make the glaze. Beat cream cheese and butter until very creamy. Beat in powdered sugar. Stir in vanilla. Slowly add milk, if needed, to make spreadable.
  • Take cake out of oven when done and spread cream cheese glaze on top while the cake is hot. Serve warm. Refrigerate leftovers.

¾ cup water

3 eggs

1 cup sweetened flaked coconut
1 (3.5 ounce) package instant coconut cream pudding mix
¾ cup dark brown sugar
⅓ cup heavy cream
¼ cup butter
¼ cup dark rum

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
