EASY CREAMY MASHED SWEET POTATOES

Easy Creamy Mashed Sweet Potatoes image

These easy mashed sweet potatoes are on the savory side, but you can add a few extra ingredients for a sweeter version. See our tips in the notes section below for our suggestions. You can simmer, bake, microwave, or use a pressure cooker to cook the sweet potatoes. Our preferred method is to simmer the potatoes since this takes a similar amount of time when using a pressure cooker and when microwaving them and less time than when using an oven. We have included the steps for cooking sweet potatoes in the oven, microwave, and pressure cooker in the article above.

Time 30m

Yield Makes 6 servings (about 5 1/2 cups)

Number Of Ingredients 7

3 pounds sweet potatoes, scrubbed clean (5 to 6 small-to-medium)
1 1/2 teaspoons fine sea salt, plus more to taste
1 bay leaf, optional or a substitute fresh thyme or rosemary sprig
3 tablespoons butter
1/8 teaspoon ground cinnamon or more to taste
3 tablespoons sour cream, heavy cream, milk or half-and-half, optional
Fine herbs and fresh ground black pepper, to taste

Steps:

  • Peel and cut sweet potatoes into 1-inch cubes. Add to a large pot and add enough water so that they are covered by about one inch of water. Add the salt and bay leaf.
  • Bring the water to a boil, reduce the heat to a simmer and cook until the potatoes are easily pierced with a fork, 10 to 12 minutes. Drain well, and then return the potatoes to the pot. Or if you plan to use a food processor, add them directly to the processor bowl. (A food processor makes extra silky mashed sweet potatoes.)
  • Add the butter, cinnamon, black pepper, and a pinch of salt. Mash the sweet potatoes with a potato masher until your desired consistency. If using a food processor, pulse until your desired consistency.
  • For extra creamy sweet potatoes, stir in sour cream or a splash of heavy cream, milk, or half-and-half. Serve with extra butter and chopped fresh herbs (optional) on top.

8 ounces chilled canned sweet potatoes (no syrup), well drained
1 tablespoon orange blossom honey
1/2 cup chilled guava nectar
1/4 cup coconut milk, unsweetened, first pressing
1 tablespoon orange liqueur (recommended: Grand Marnier)
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon salt
4 large ice cubes
1 cup chilled heavy whipping cream
2 tablespoons granulated sugar
1/2 cup sweetened flaked coconut
1 medium navel orange, sliced
4 ladyfingers, optional

Steps:

  • Preheat oven to 350 degrees F.

1 can(s) 8 oz. can crushed pineapple (undrained)
6 Tbsp melted butter or margarine
3/4 tsp salt
1 pinch pepper
1/2 c saltienes (crushed)
2 Tbsp brown sugar
1 pinch cloves

Steps:

  • 1. In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.
  • 2. Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.
  • 3. Transfer to a greased 2-qt. baking dish.
  • 4. Combine saltines, brown sugar, cloves and remaining butter,; sprinkle over potatoes. Bake uncovered, at 375 degrees for 30 min.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes with smooth skin. Avoid any that are soft, wrinkled, or have cuts or bruises.
  • Peel and cut the sweet potatoes evenly: This will help them cook evenly. If the pieces are too large, they will take longer to cook and may not be as tender.
  • Don't overcook the sweet potatoes: Overcooked sweet potatoes will be mushy and bland. Cook them just until they are tender when pierced with a fork.
  • Use fresh pineapple and mango: Fresh pineapple and mango will give your mashed sweet potatoes the best flavor. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well before using.
  • Add some tropical spices: Tropical spices like cinnamon, nutmeg, and ginger will give your mashed sweet potatoes a warm and inviting flavor.
  • Garnish with something special: A sprinkle of chopped nuts, a drizzle of honey, or a dollop of yogurt will add a touch of elegance to your mashed sweet potatoes.
