TROPICAL CUCUMBER SALAD
My friend Buffy gave me this recipe. I really didn't think that it would be that great, but it really is! This salad is very light and refreshing and would be the perfect side dish to a light summer meal. I think that it would pair perfectly with grilled salmon or seared tuna. Best if made within an hour or two of serving. Does not keep well overnight.

TROPICAL CUCUMBER SALAD
Originally in an Eating Well Newsletter. Combine cucumber, pineapple and avocado with a sweet & sour dressing to make it tropical tasting. The recipe called for a mango but we are not mango eaters, so I changed a few things.

- Use a variety of fruits: This will add sweetness, crunch, and flavor to the salad. Some good options include pineapple, mango, papaya, and watermelon.
- Make the dressing ahead of time: This will allow the flavors to meld and develop.
- Chill the salad before serving: This will help the flavors come together and make the salad more refreshing.
