TRIPLE CHOCOLATE BROWNIES

Time 45m

Yield 18 brownies

Number Of Ingredients 11

3 sticks plus 2 tablespoons unsalted butter
12 ounces best-quality bittersweet chocolate
6 eggs
1 3/4 cups superfine sugar
1 tablespoon pure vanilla extract
1 1/2 cups plus 2 tablespoons all-purpose flour
1 teaspoon salt
1/2 cup white chocolate buttons, chips, or morsels
1/2 cup semisweet chocolate buttons, chips or morsels
Approximately 2 teaspoons confectioners' sugar, for garnish
Special equipment: Baking tin (approximately 11 1/4 inches by 9 inches by 2 inches), sides and base lined with baking parchment.

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter and dark chocolate together in a large heavy based pan over a low heat.
  • In a bowl or large measuring jug, beat the eggs together with the superfine sugar and vanilla extract.
  • Allow the chocolate mixture to cool a little, then add the egg and sugar mixture and beat well. Fold in the flour and salt. Then stir in the white chocolate buttons or chips, and the semisweet chocolate buttons or chips. Beat to combine then scrape and pour the brownie mixture into the prepared tin.
  • Bake for about 25 minutes. You can see when the brownies are ready because the top dries to a slightly paler brown speckle, while the middle remains dark, dense and gooey. Even with such a big batch you do need to keep checking on it: the difference between gooey brownies and dry ones is only a few minutes. Remember, too, that they will continue to cook as they cool.
  • To serve, cut into squares while still warm and pile up on a large plate, sprinkling with confectioners' sugar pushed with a teaspoon through a small sieve.

TRIPLE-TIER BROWNIES

Warning. This could be addictive, and you don't need a large square. I found this recipe in Quick Cooking, and co-workers gobbled it up and asked for the recipe -- so I thought I would post it here for others to try. Cooking time includes cooling time.

Time 1h40m

Yield 28 bars

20 ounces fudge brownie mix (or size required for 13x9-inch size pan)
11 1/2 ounces milk chocolate chips

Time 40m

Yield Makes 16

Number Of Ingredients 10

1/4 cup (1/2 stick) unsalted butter, plus more for baking pan
1/4 cup black beans, rinsed, drained, and pureed until completely smooth
3 ounces semisweet chocolate, chopped (1/2 cup)
2 ounces unsweetened chocolate, chopped (1/3 cup)
1 1/3 cups sugar
2 large eggs, plus 1 large egg white
1 1/2 teaspoons pure vanilla extract
1 cup all-purpose flour (spooned and leveled)
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees. Lightly butter a 9-inch square baking pan and line with parchment paper, leaving a 2-inch overhang on all sides. In a large microwave-safe bowl, combine butter, bean puree, and chocolates and microwave in 30-second increments, stirring each time, until melted and smooth, about 2 minutes. Whisk in sugar, eggs and egg white, and vanilla until smooth.
  • In a small bowl, whisk together flour, cocoa powder, baking powder, and salt. Stir into chocolate mixture until just combined. Pour batter into pan; smooth top. Bake until top is cracked and a toothpick inserted in center has moist crumbs attached, about 25 minutes (center will seem undercooked but will set further as it cools). Let cool completely in pan on a wire rack. Using parchment, lift brownie from pan and cut into 16 squares.

Tips:

  • Use high-quality chocolate. This will make a big difference in the flavor of your brownies.
  • Don't overmix the batter. Overmixing will make the brownies tough.
  • Bake the brownies until a toothpick inserted in the center comes out with just a few moist crumbs attached. Overbaking will make the brownies dry.
  • Let the brownies cool completely before frosting them. This will help the frosting set properly.
  • If you don't have a piping bag, you can use a ziplock bag with the corner snipped off to frost the brownies.

Conclusion:

Triple-tier brownies are a delicious and impressive dessert that is perfect for any occasion. With a little planning and effort, you can easily make this showstopping dessert at home. Just be sure to follow the tips above to ensure that your brownies turn out perfectly.
