Toddler Muffins image

Mini muffins for finicky toddlers with the addition of fruit and veggies. My son is 2 and has been eating these for a year. I always keep a supply in the freezer, he loves them frozen especially when new teeth are coming in! Adults love them too. Great for play groups! Recipe makes 24 mini muffins or 12 regular-size muffins.

Tips:

  • Choose ripe bananas. The riper the bananas, the sweeter and more flavorful your muffins will be. You can use fresh, frozen, or leftover bananas for this recipe.
  • Use a fork to mash the bananas. This will ensure that they are evenly distributed throughout the batter and will prevent any lumps.
  • Don't overmix the batter. Overmixing the batter will result in tough muffins. Stir the batter just until the ingredients are combined.
  • Fill the muffin cups only about 2/3 full. This will allow the muffins to rise properly and prevent them from overflowing.
  • Bake the muffins at a high temperature for a short amount of time. This will help them to rise quickly and evenly.
  • Let the muffins cool completely before frosting them. This will prevent the frosting from melting.

Conclusion:

Triple Hitter Muffins are a delicious and nutritious snack that are perfect for toddlers and adults alike. They are made with simple ingredients and can be easily customized to suit your taste preferences. Whether you like them plain, frosted, or with fruit, Triple Hitter Muffins are sure to be a hit.
