TRIPLE CHOCOLATE ZUCCHINI MUFFINS

Triple Chocolate Zucchini Muffins image

Moist and hearty muffins packed with protein and other goodness. The zucchini makes these nice and moist without changing the flavor. There are lots of variations you can make. The rolled oats add chewiness and are a good source of protein and fiber, but you can replace with any kind of flour. I chose to use honey and brown sugar instead of refined white sugar. My protein powder was quite sweet, so these were as sweet as brownies. You could also use regular sized chocolate chips, but I like how the mini ones distribute the chocolate flavor more.

I have tried many chocolate zucchini recipes, but this one, with 3 sources of chocolate, is the most delicious! The sour cream makes it a very moist loaf, and best of all, it is super easy to make! This recipe can easily be made into muffins (picture), by spooning batter into greased muffin tins, and baking for 25 minutes.

Tips:

  • Choose ripe zucchini: The best zucchini for baking is ripe and firm, with a deep green color. Avoid zucchini that is too soft or has blemishes.
  • Grate the zucchini: Grating the zucchini helps to release its moisture, making it easier to incorporate into the batter.
  • Don't overmix the batter: Overmixing the batter can result in a tough, dense loaf. Mix just until the ingredients are combined.
  • Use a loaf pan that is at least 9x5 inches: This will ensure that the loaf has enough room to rise and bake evenly.
  • Bake the loaf at 350°F for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool completely before serving: This will help it to set and make it easier to slice.
  • Store the loaf in an airtight container at room temperature for up to 3 days.

Conclusion:

This triple chocolate zucchini loaf is a moist, delicious, and easy-to-make treat. It's perfect for breakfast, brunch, or dessert. With its rich chocolate flavor and the added benefit of hidden zucchini, this loaf is sure to be a hit with everyone who tries it. So next time you have some extra zucchini on hand, give this recipe a try. You won't be disappointed!
