1 1/2 cups all purpose flour
1/2 cup powdered sugar
1 teaspoon vanilla extract (or the extract flavor of your choice)

  • Measure the dough by Tablespoons and place on the parchment lined cookie sheet 2 inches a part. You can decorate with nuts or chocolate chips at this time by placing them in the center of the dough.
  • Place cookie sheet in your preheated 350 degree oven and bake for approximately 13 - 15 minutes or until the edges are light brown. Being careful not to over bake them and have the edges too brown. Remove from oven and let cool on cookie sheet 5 minutes, transfer to a cooling rack.
  • After cookies have cooled you can glaze them, dip half of the cookie in melted chocolate or sandwich them together with a fruit preserve in the middle or enjoy their buttery goodness without embellishments.

CARAMEL CHOCOLATE SHORTBREADS

Caramel Chocolate Shortbreads image

Shortbread alone is a treat, but when topped with layers of caramel, chocolate and toasted coconut, it becomes akin to a candy bar. Using mini chocolate chips makes this recipe super easy -- they melt right into the cookie.

Time 2h

Yield 12 pieces

Number Of Ingredients 9

3/4 cup sweetened shredded coconut
2 sticks (1 cup) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon fine salt
3/4 cup confectioners' sugar
2 cups all-purpose flour, plus more for dusting (see Cook's Note)
One 11-ounce bag caramels, pieces unwrapped
Nonstick cooking spray, for spraying the spoon
1 cup mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil, leaving about a 2-inch overhang on 2 sides. Spread the coconut in a single layer on a baking sheet and set aside.
  • Beat the butter, vanilla and salt with an electric mixer on medium speed in a large bowl until smooth and creamy. Add the confectioners' sugar and mix on low until just incorporated. Beat in the flour in 2 batches to make a smooth dough.
  • Lightly flour your hands and press the dough into the prepared baking pan. Bake the shortbread until the edges are firm and the top is dry, 28 to 30 minutes. Top the shortbread with the caramels in an even layer. Return to the oven along with the baking sheet of coconut and cook, tossing the coconut once, until the caramels are melted and the coconut is golden, about 10 minutes.
  • Spray the back of a spoon with cooking spray and use it to spread the caramel all over the shortbread. Sprinkle with the chocolate and let sit until the chips are melted, about 5 minutes. Sprinkle with the toasted coconut and let cool completely, about 1 hour.
  • Using the foil overhang as handles, lift the shortbread out of the pan and cut into 12 pieces.

Time 1h45m

Yield 60 cookies

Number Of Ingredients 16

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup butter
1 cup brown sugar
1 cup granulated sugar
2 tablespoons instant coffee powder
2 teaspoons vanilla extract
4 eggs
4 ounces unsweetened chocolate, melted and cooled
6 ounces chocolate chips
1 cup chopped walnuts (optional)
Butter or margarine for greasing baking sheets
White Chocolate Glaze
1/4 cup grated semisweet chocolate (optional)

Steps:

  • Combine flour, baking powder, cinnamon and salt in a medium-size bowl. Set aside. In a large bowl, beat butter, sugars, instant coffee and vanilla together until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in melted chocolate.
  • Stir in flour mixture 1/2 cup at a time, blending well after each addition. Stir in chocolate chips and walnuts, if desired. Cover and freeze or refrigerate until very firm, one to four hours.
  • When ready to bake preheat oven to 350 degrees. Grease four large baking sheets. Divide dough into sixths; refrigerate all but one portion.
  • With floured hands, roll slightly rounded teaspoons of unrefrigerated dough into 1-inch balls. Arrange, 1 inch apart, on baking sheets. Repeat with remaining five portions of dough, keeping dough you're not working on refrigerated.
  • Bake 7 to 9 minutes, or until barely brown on the bottom. Do not overbake. Cookies will seem very soft, but will firm as they cool. Cool cookies on racks.
  • Spoon about 1 teaspoon of glaze on each cookie and spread with back of the spoon. If desired, lightly sprinkle each cookie with grated chocolate. Let glaze set before storing cookies in an airtight container for up to one week. They can be frozen.

Tips:

  • Use high-quality chocolate: This will make a big difference in the flavor of your shortbread drops. Look for chocolate that is at least 70% cacao.
  • Chill the dough before baking: This will help the shortbread drops hold their shape in the oven.
  • Bake the shortbread drops until they are just set: Overbaking will make them dry and crumbly.
  • Let the shortbread drops cool completely before serving: This will help them firm up and develop their full flavor.

Conclusion:

These triple-chocolate shortbread drops are the perfect treat for any chocolate lover. They're easy to make and can be customized to your liking. Whether you like them plain or with a variety of toppings, these shortbread drops are sure to be a hit.

Here are some additional tips for making triple-chocolate shortbread drops:
