6 tablespoons unsalted butter, plus more for the pan
2 ounces semisweet chocolate, chopped
1/3 cup sugar
2 large eggs
2/3 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
Pinch of salt
8 ounces milk chocolate, chopped
1 cup heavy cream
3 8-ounce packages cream cheese, at room temperature
1 cup sugar
3 large eggs
1 tablespoon pure vanilla extract
2 ounces white chocolate, for topping

Steps:

  • Position racks in the middle and lower third of the oven; preheat to 325 degrees F. Butter the bottom and side of a 9-inch springform pan; wrap the outside of the pan with foil to catch any drips.
  • Make the crust: Melt the butter and semisweet chocolate in a small saucepan over medium heat, stirring; let cool slightly. Stir in the sugar and eggs until combined. 2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar

2 large eggs, room temperature, lightly beaten
GANACHE:
1-1/2 cups semisweet chocolate chips
1/2 cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. Line a 13x9-in. pan with foil, letting ends extend up sides; grease foil. In a microwave, melt butter in a large microwave-safe bowl. Stir in sugar, cocoa and vanilla.
