TRES LECHES
I acquired this recipe for Tres Leches (Three Milks Cake) while living in Miami. Although you can find it at many Cuban restaurants, its origins are probably Mexican or Nicaraguan. It is very moist and intensely sweet. Due to the milk content this dessert must be kept refrigerated, and is best when served chilled.

TRES LECHES CAKE (ALTON BROWN)
Tres Leches translates to "three milks" which is what makes this cake unbelivably moist, light, and sweet without being overly so. I recently served this at my fiance's birthday dinner and it was a huge hit. But of course, as my fiance says, "Alton Brown is THE MAN!" You do need to start the cake the day before you plan to serve it, so keep that in mind with your timing.

Tips:
- Before starting, make sure all ingredients are at room temperature, as this will ensure they blend together smoothly.
- Use a stand or hand mixer fitted with the paddle attachment to beat the butter and sugar together until light and fluffy. This will help incorporate air into the mixture, resulting in a tender and moist cake.
- Gradually add the eggs one at a time, beating well after each addition. This will prevent the mixture from curdling.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, alternating with the milk. This will help prevent the batter from becoming too thick or lumpy.
- Divide the batter evenly between the prepared cake pans and bake until a toothpick inserted into the center comes out clean. This will ensure the cakes are cooked through.
- While the cakes are cooling, make the tres leches mixture by combining the evaporated milk, condensed milk, and heavy cream. Pour the mixture evenly over the cooled cakes and let them soak in for at least 30 minutes. This will give the cakes a rich and moist flavor.
- For the hazelnut frosting, beat the butter and cream cheese together until smooth. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy. Fold in the chopped hazelnuts and spread the frosting over the cooled cakes.
- Garnish the cakes with additional chopped hazelnuts, if desired. This will add a touch of elegance to your dessert.
Conclusion:
This tres leches hazelnut cake is a delicious and decadent dessert that is perfect for any special occasion. The moist and tender cakes are soaked in a flavorful tres leches mixture and topped with a rich and creamy hazelnut frosting. This cake is sure to be a hit with everyone who tries it.
