Time 25m

Number Of Ingredients 11

2 tablespoons oil
1 red bell pepper (cut into strips)
½ red onion (sliced into thin half-moons)
4 cloves garlic (minced)
1 tablespoon cumin
2 teaspoons salt
14 oz can enchilada sauce
2 cups cheese
1 cup cooked black beans
4-6 flour tortillas
cilantro, jalapenos, lime, etc.

Steps:

  • Prepare your coals or get your campfire going so that you'll have embers to cook with.
  • Over medium heat, heat the oil in a Dutch oven. Add the peppers and saute for a few minutes until they are starting to soften. Add the onions and saute until the onions are soft and translucent and the peppers are soft. Add the garlic, cumin, and salt, and saute 30 seconds, until fragrant. Remove from heat and transfer the vegetables to a plate or bowl.
  • Add 1/2 cup enchilada sauce to coat the bottom of the Dutch oven.
  • To build the enchiladas, place onions and peppers in a line the center of a flour tortilla. Add a few spoonfuls of black beans and top with cheese. Roll the tortilla around the fillings, then place the enchilada, seam side down, into the Dutch oven. Repeat with the remaining ingredients. This recipe will make 4-6 enchiladas depending on the size of your Dutch oven.
  • Cover the enchiladas with the remaining sauce and cheese. Place the lid on top.
  • Return the Dutch oven to your campfire. Place it over indirect heat (the grill grate over the campfire works great) and stack 14-16 coals on the lid. Cook about 10 minutes, until the cheese is melted.
  • Serve topped with jalapenos, cilantro, and a squeeze of lime & enjoy!

SIMPLE PERFECT ENCHILADAS

Simple Perfect Enchiladas image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h15m

Yield 8 servings

Number Of Ingredients 16

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

Time 2h35m

Yield 4

Number Of Ingredients 26

1 tablespoon olive oil
½ cup finely chopped onion
4 teaspoons minced garlic
1 teaspoon dried oregano
3 ½ teaspoons chili powder
1 teaspoon dried basil
¼ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon dried cilantro
½ cup prepared salsa
1 (6 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 cups chicken broth
1 pound ground beef
¾ cup finely chopped onion
1 tablespoon minced garlic
½ teaspoon chili powder
½ teaspoon ground cumin
½ cup prepared red enchilada sauce
½ cup beef broth
½ cup shredded Mexican-style cheese blend
cooking spray
8 (6 inch) flour tortillas
2 cups shredded Mexican-style cheese blend
½ cup chopped fresh cilantro

Steps:

  • To make the spicy red sauce, heat the olive oil in a large saucepan over medium heat, and cook and stir 1/2 cup of onion until the onion is softened, 3 to 4 minutes. Stir in 4 teaspoons of garlic, and cook and stir until fragrant, another 3 to 5 minutes, watching carefully to avoid burning the garlic. Stir in the oregano, 3 1/2 teaspoons of chili powder, basil, salt and black pepper, 1 teaspoon of cumin, the dried cilantro, salsa, tomato sauce, tomato paste, and chicken broth until the sauce is smoothly combined.
  • Bring the sauce to a simmer, reduce heat to low, and simmer about 30 minutes, stirring often, until the flavors have blended and the sauce has thickened slightly.
  • While spicy red sauce is simmering, cook and stir the ground beef in a large skillet over medium-high heat until the meat is evenly browned. Break the meat up into crumbles as it cooks, and drain off excess grease. Mix in 3/4 cup of onion, 1 tablespoon of garlic, 1/2 teaspoon of chili powder, and 1/2 teaspoon of cumin into the meat, and cook and stir until the onions are softened and the meat mixture is fragrant with spices, 5 to 10 more minutes. Stir in the enchilada sauce and beef broth; simmer for 5 more minutes. Stir in 1/2 cup of Mexican cheese blend, and allow the cheese to melt into the meat sauce. Reduce heat to low, and simmer the meat sauce for 30 more minutes to thicken.
  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Spray both sides of each tortilla with cooking spray, stack up the tortillas with a piece of aluminum foil between each tortilla, and wrap the stack with aluminum foil. Place the tortillas into the preheated oven to warm, about 10 minutes.
  • Spread about 1/2 cup of the spicy red sauce over the bottom of the prepared baking dish. Fill each tortilla with the meat sauce, reserving about 1/2 cup of the meat sauce; roll the tortillas into enchiladas, and arrange in the baking dish, seam sides down. Pour the remaining spicy red sauce over the enchiladas. Sprinkle with the reserved 1/2 cup of meat mixture, and top with remaining 2 cups of Mexican cheese blend.
  • Bake until the cheese topping is golden brown and the sauce is bubbly, about 30 minutes. Remove from oven and sprinkle with cilantro to serve.

TRENCHIES...TRAILER TRASH ENCHILADAS

Trenchies...trailer Trash Enchiladas image

This is a VERY easy dish to create. I got this from a friend in California and it is a great "what are we having for dinner" solution as you can have all of the ingredients on hand most of the time. I swear the hardest part is cutting the chimi's out of the packaging. You can use any frozen burrito, but the best I have found is the chimichangas from either of the club stores.

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 5

6 burritos
16 ounces green enchilada sauce
12 ounces cream of chicken soup
1 cup low-fat sour cream

  • Mix enchilada sauce, sour cream and soup in bowl.
  • Put about half of sauce into the bottom of a pan sprayed with pam. You determine which size pan you have that this will work with, I use either glass or pampered chef --
  • Place burritos in a single layer, then cover with remaining sauce.
  • Cover with foil and bake at 350 for 20 minutes.
  • Spread cheese over top and place back in oven for 10 minutes.

ENCHILADAS CON CARNE

Enchiladas Con Carne image

There are a few cool tricks to this recipe, one of which I picked up from an old issue of Bon Appétit, one I learned from Robb Walsh, the great Tex-Mex scholar and restaurateur who runs El Real Tex-Mex in Houston, and a final one I learned by happenstance. First, for the thickening agent in the chile sauce, toast raw all-purpose flour in a pan until it is nutty and golden brown, then reserve it to stir in with the browned beef later in the recipe. Second, if you like truly melty cheese in the classic Tex-Mex tradition, use a mixture of American cheese, like Velveeta, with the Cheddar you use inside and on top of the finished enchiladas. Finally, if you're fearful that a casserole of cheese, chili and fried tortillas may be a little rich for dinner, serve it with a bowl of tomatillo pineapple salsa on the side. The acidity provides a nice balance. (Note also that as with all recipes, but particularly this one, some planning and practice can get the preparation down to 60 minutes.)

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 16

1/2 cup all-purpose flour
2 tablespoons neutral oil, like canola
1 pound ground chuck beef, ideally 20 percent fat
Kosher salt and ground black pepper, to taste
1 medium white onion, peeled and chopped
2 cloves garlic, peeled and minced
1 jalapeño pepper or more to taste, seeds removed if you want it less spicy, stemmed and chopped
1 cup chopped or canned crushed tomatoes
3 tablespoons chile powder
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano, ideally Mexican
2 cups chicken stock, ideally homemade or low-sodium if store-bought
1/2 cup neutral oil, like canola
12 yellow corn tortillas
3 cups shredded Cheddar cheese, or a mixture of 1 1/2 cups Cheddar cheese and 1 1/2 cups American cheese, like Velveeta
1 medium-size white onion, peeled and chopped (optional)

Steps:

  • Prepare the chili con carne: Put flour in a large sauté pan set over medium-high heat. Cook, stirring frequently, until it begins to turn golden brown and smell nutty, then pour it onto a plate to cool.
  • Wipe out sauté pan and return it to high heat with 2 tablespoons oil. When oil is hot and shimmery, add ground beef to pan, and cook, breaking it up with a fork and stirring, until it is well browned, about 12 to 15 minutes. Season with salt and pepper, then use a slotted spoon to remove meat to a bowl, leaving drippings behind.
  • Add onion, garlic and jalapeño to pan and cook, stirring to scrape up any browned bits of meat, for 10 to 12 minutes, or until vegetables are soft. Stir in tomatoes and cook until their liquid has evaporated, then add chile powder, cumin and oregano and stir to combine. After a minute or so, when mixture begins to turn fragrant, return browned meat to pan, along with toasted flour, and stir well to combine.
  • Lower heat to medium-high and slowly stir in chicken stock, 1/2 cup at a time, until mixture has thickened and started to simmer. Lower heat again and allow chili to cook slowly for 45 minutes to 1 hour, until meat is tender. Add more stock or water if needed. Use immediately, or let cool, cover and refrigerate for up to a few days.
  • When you are ready to cook the enchiladas, heat oven to 425 degrees. In a medium sauté pan set over medium-high heat, heat 1/2 cup neutral oil until it begins to shimmer. Using tongs or a wide spatula, place a tortilla in the hot fat; it should start to bubble immediately. Heat tortilla for about 10 seconds a side, until soft and lightly browned. Remove tortilla and set on a rack set over a baking pan, or just on a baking pan if you don't have a rack. Repeat with remaining tortillas, working quickly.
  • Assemble the enchiladas: Using a ladle, put about 1/2 cup chili in the bottom of a 9-by-13-inch baking pan and spread it out a little. Roll a few tablespoons of cheese into each tortilla, along with a tablespoon or so of chili, then place it seam-side down in the pan, nestling each one against the last. Ladle remaining chili over top of rolled tortillas and sprinkle with remaining cheese.
  • Transfer to oven and bake until sauce bubbles and cheese is melted, about 10 to 15 minutes. Sprinkle chopped onions over the top, if using, and serve immediately.

Tips:

  • Use a variety of tortillas to add flavor and texture to your enchiladas. Corn tortillas, flour tortillas, and whole wheat tortillas can all be used.
  • Don't be afraid to experiment with different fillings. Enchiladas can be filled with anything from traditional Mexican ingredients like chicken, beef, and beans to more unique ingredients like sweet potatoes, black beans, and corn. Leftovers are also fun to add to enchiladas.
  • Choose a sauce that complements the fillings you are using. Red sauce, green sauce, and mole are all popular choices. You can also make your own sauce or use a store-bought sauce.
  • Be generous with the cheese. Cheese is what holds the enchiladas together and gives them their gooey, delicious texture. Use a Mexican blend of cheese for the best flavor.
  • Bake the enchiladas until they are bubbly and the cheese is melted and golden brown. This will take about 20 minutes.
  • Serve the enchiladas immediately with your favorite toppings. Sour cream, guacamole, salsa, and cilantro are all popular choices.

Enchiladas are a delicious and versatile dish that can be made with a variety of ingredients. By following these tips, you can make enchiladas that are sure to please everyone at your table. So next time you're looking for a quick and easy meal, give enchiladas a try!
