TRASH SOUP

I began making this soup when my children were little. It was a good way to clean out the left overs in the frig as well a way to get my kids to eat lots of veggies. My children named the soup and I couldn't change the name though it's not an appetizing title.

Time 1h30m

Yield 10-12 serving(s)

Number Of Ingredients 13

1 1/2 lbs stewing beef
5 -6 carrots (1/2 inch dice)
10 ounces frozen baby lima beans
10 ounces frozen broccoli florets
1/4 cup barley
1 small zucchini (diced)
1 small yellow squash (diced)
1 (28 ounce) can diced tomatoes with juice
1 (1 1/2 ounce) package Knorr vegetable soup mix
32 ounces beef broth
11 1/2 ounces V8 vegetable juice
1 cup small shell pasta
1/4 cup olive oil

Steps:

  • Brown Beef in hot oil in pan.
  • To this add beef Broth with the Knorr soup mix, barley that has been soaked for a few hours in water.
  • Add canned tomatoes and V-8 juice to suit your taste.
  • Add vegetables longest cooking first such as the lima beans, carrots then broccoli, zucchini and squash.
  • Add pasta last. It will swell and get over cooked if you cook too long. I usually turn the soup off and add the pasta, stir and let set about ½ hour. Or you can cook the pasta of choice separate and add to individual soup bowls as you serve it. You can adjust to your personal taste by adjusting V-8, beef broth and water.

WHITE TRASH CASSEROLE

Found on Pinterest and shared so many times not sure who came up with it. The original recipe calls for Cream of Mushroom Soup, but I love Cream of Onion so I changed. You could use mushroom, onion or even Cream of Celery. Whatever you have on hand.

Yield 6 serving(s)

Number Of Ingredients 6

1 lb ground meat
1 small onion, chopped
1 (10 ounce) can onion soup
1 small brick Velveeta cheese, cut in cubes
1 (28 ounce) package tater tots
1 (15 ounce) can whole kernel corn, drained

  • 1. Preheat oven to 350 degrees. Brown beef and onion together then drain.
  • 2. Spread beef mixture in bottom of a casserole dish. Layer soup, corn, Velveeta, and tater tots.
  • 3. Bake for 45 minutes to an hour, until tater tots are golden brown.

Tips:

  • Use a variety of vegetables. The more vegetables you use, the more flavorful your soup will be. Some good options include carrots, celery, onions, potatoes, tomatoes, and greens.
  • Don't be afraid to use scraps. Vegetable scraps, fruit scraps, and even meat scraps can all be used to make a delicious soup. Just be sure to wash them thoroughly before using them.
  • Season your soup to taste. Salt, pepper, and garlic are all good basic seasonings for soup. You can also add other spices and herbs to taste.
  • Let your soup simmer for a while. This will help the flavors to meld and develop. The longer you simmer your soup, the better it will taste.
  • Serve your soup with a variety of toppings. Some good options include bread, crackers, cheese, and sour cream.
