Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 11

1 1/2 cups shredded gruyere (6 ounces, 180 g)
1 1/2 cups shredded emmenthaler cheese (6 ounces, 180 g)
1/2 cup shredded Appenzeller cheese (2 ounces, 60 g)
2 -3 tablespoons all-purpose flour
1 garlic clove, halved
1 cup dry white wine
1 teaspoon fresh lemon juice
1 dash kirsch, a swiss liquor (optional)
fresh ground pepper, to taste
1 pinch nutmeg
crusty bread, cut into large cubes

Steps:

  • The optimal choice of pots is a steel or cast iron medium sized pot (2 quart) with an enameled interior.
  • In a medium sized bowl, combine the three cheeses and toss with the flour.
  • Rub the inside of the fondue pot with the garlic halves.
  • Add the wine and heat over medium heat until hot, but not boiling.
  • Stir in lemon juice and kirsch.
  • Add a handful of cheese at a time to the wine mixture, stirring constantly and not adding more cheese until the previous has melted, bubbling gently and has the appearance of a light creamy sauce season with pepper and nutmeg.
  • Remove the pot from the heat and place over an alcohol safety burner on the table.
  • Adjust the burner flame so the fondue continues to bubble gently.
  • Serve with plenty of crusty bread cubes.

MELTING POT TRADITIONAL SWISS CHEESE FONDUE RECIPE - (4/5)

Melting Pot Traditional Swiss Cheese Fondue Recipe - (4/5) image

Provided by sandiB2010

Number Of Ingredients 12

For dipping:
4 ounces white wine
1 demi (small) spoon of crushed garlic
1/4 cup fresh lemon juice
1/2 pound Emmenthaler (Emmental) cheese
1/2 pound Gruyere Swiss cheese
1/2 ounce Kirschwasser
Cubed bread
Apples
Carrots
Celery
Other assorted vegetables like broccoli, cauliflower or squash

Steps:

  • Grate cheese. Lightly dust cheese with flour and set aside. In a hot fondue pot*, add wine, garlic and lemon juice, stir with fork. Slowly add the cheese combo and stir to melt. Add the Kirschwasser and let it burn off. Add fresh ground pepper to taste and ground nutmeg (optional). *I am preparing my dip stovetop. I will be transferring it to a small crockpot and keeping it on the warm setting.

Tips:

  • Use a heavy-bottomed pot: This will help distribute the heat evenly and prevent the cheese from burning.
  • Grate the cheese yourself: Pre-shredded cheese contains additives that can prevent it from melting smoothly.
  • Use a dry white wine: A dry white wine will help to balance out the richness of the cheese.
  • Add the cheese slowly: Stir the cheese into the wine mixture a little at a time, allowing it to melt completely before adding more.
  • Keep the fondue warm: A fondue pot with a built-in heater will help to keep the fondue warm and melted.
  • Serve with a variety of dippers: Bread, vegetables, and fruit are all great options for dipping in fondue.

Conclusion:

Fondue is a delicious and versatile dish that can be enjoyed by people of all ages. With a little planning and preparation, you can easily make fondue at home. So next time you're looking for a fun and festive meal, give fondue a try!
