CRANBERRY RELISH

Time 20m

Number Of Ingredients 4

2 cups rinsed raw cranberries
2 peeled and cored tart green apples, cut into thick slices
1 large, whole (peel ON) seedless orange, cut into sections
1 to 2 cups granulated sugar (depending on how sweet you would like your relish to be)

Steps:

  • Prepare your grinder: If you are using an old fashioned grinder, use the medium-sized grinder plate and set the grinder on the edge of a table with a large bowl or pan to catch the fruit mix as it is ground. Old fashioned grinders tend to leak juice down the grinder base, so you may want to set up a bowl underneath to catch the drips. If you don't have an old fashioned grinder, you can use the grinder attachment to a KitchenAid mixer, or you can use a food processor. If you use a food processor, be careful not to over-pulse! Or you'll have mush instead of relish. You can also just chop very finely by hand, but that's difficult, especially with the cranberries.
  • Push fruit through grinder: Push the cranberries, orange sections, and apple slices through the grinder. Include the orange peel! Alternate the fruit as you push it through the grinder so that different fruits get ground together. If you do not have a grinder, pulse fruit in a food processor.

Categories     condiment

Time 5m

Yield 3 cups

Number Of Ingredients 4

One 12-ounce bag fresh cranberries, frozen for a few hours before processing
1 navel orange, skin on, cut into chunks, seeds and excess white pith removed
3/4 cup granulated sugar
1/3 cup honey

Steps:

  • Place the frozen cranberries, orange, granulated sugar and honey in a food processor. Process until the mixture is evenly chopped. Store in the refrigerator until needed. Serve as a condiment for roasted turkey.

Tips:

  • Fresh cranberries: Use fresh cranberries for the best flavor and texture. Avoid cranberries that are bruised or soft.
  • Orange and lemon zest: The zest of orange and lemon adds a bright, citrusy flavor to the relish. Be sure to use unwaxed fruit.
  • Sugar: Use granulated sugar or a combination of granulated and brown sugar. Brown sugar will give the relish a slightly richer flavor.
  • Chopped nuts: Chopped walnuts, pecans, or almonds add a nice crunch to the relish. If you don't have any nuts on hand, you can omit them.
  • Serve chilled: Cranberry relish is best served chilled. You can make it a day or two ahead of time and store it in the refrigerator.

Conclusion:

Cranberry relish is a classic holiday side dish that is easy to make and always a crowd-pleaser. With its bright, tart flavor and festive red color, it's the perfect addition to any holiday table. Whether you're serving it with turkey, ham, or pork, cranberry relish is sure to be a hit.
