CLASSIC APPLE PIE

Provided by Food Network Kitchen

Categories     dessert

Time 3h20m

Yield 8 to 10 servings

Number Of Ingredients 16

4 pounds mixed apples (such as Granny Smith, Gala and McIntosh)
2/3 cup granulated sugar
2 tablespoons fresh lemon juice
6 tablespoons unsalted butter
2 tablespoons all-purpose flour, plus more for dusting
1 teaspoon ground cinnamon or apple pie spice
1/4 teaspoon salt
2 disks Pie Dough, recipe follows
1 large egg, beaten
Coarse sugar, for sprinkling (optional)
2 1/2 cups all-purpose flour
4 tablespoons cold vegetable shortening
2 teaspoons sugar
1 teaspoon apple cider vinegar
1/2 teaspoon salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into small pieces

Steps:

  • Peel and core the apples; slice 1/4 inch thick. Transfer to a bowl and toss with the granulated sugar and lemon juice. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the apples and cook, stirring occasionally, until softened, 12 to 15 minutes. Add the flour, cinnamon and salt and stir until the juices thicken, about 2 minutes. Remove from the heat and let cool completely. (The filling can be made up to 2 days ahead; cover and refrigerate.)
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate. Add the cooled filling and dot with the remaining 2 tablespoons butter.
  • Roll out the remaining disk of dough into a 12-inch round. Lay the dough over the filling and press the two crusts together around the edges. Fold the overhanging dough under itself and crimp with your fingers. Brush the top crust with the beaten egg and sprinkle with coarse sugar. Cut a few slits in the top crust to let steam escape. Chill 1 hour.
  • Put a baking sheet on the bottom oven rack and preheat to 425 degrees F for at least 30 minutes. Put the pie directly on the hot baking sheet and reduce the oven temperature to 375 degrees F; bake until the pie is golden and the filling is bubbly, 1 hour to 1 hour, 10 minutes, rotating the pie as needed. (Cover the edges with foil if they are browning too quickly.) Transfer to a rack and let cool until the filling is set, about 3 hours.
  • Pulse the flour, shortening, sugar, vinegar and salt in a food processor until it looks like fine meal. Add the butter and pulse until it is in pea-size pieces. Sprinkle in 1/4 cup ice water and pulse until the dough begins to come together. Pinch the dough with your fingers; if it doesn't hold together, add up to 4 more tablespoons ice water, 1 tablespoon at a time, and pulse again.
  • Divide the dough between 2 sheets of plastic wrap and pat each into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or preferably overnight, or freeze up to 2 months.

CHEF JOHN'S EASY APPLE PIE

Chef John's Easy Apple Pie image

Not your traditional apple pie, this filling is caramelized apples held together with a very glossy, just-thick-enough apple syrup.

Provided by Chef John

Categories     Desserts     Pies     Apple Pie Recipes

Time 2h20m

Yield 8

Number Of Ingredients 8

6 tablespoons unsalted butter
¼ cup white sugar
½ cup brown sugar
1 pinch salt
¼ teaspoon ground cinnamon
¼ cup water
1 (15 ounce) package double crust ready-to-use pie crust (such as Pillsbury®)
4 large red apples, cored and thinly sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in saucepan over medium heat. Stir in white sugar, brown sugar, salt, cinnamon, and water. Bring the syrup to a boil, stirring constantly to dissolve sugar, then remove from heat.
  • Unroll pie crusts, press one into a 9-inch pie dish, and place the apples into the crust. Unroll the second crust on a work surface, and cut into about 8 1-inch wide strips. Criss-cross the strips over the apples, or weave into a lattice crust. Crimp the bottom crust over the lattice strips with your fingers. Spoon caramel sauce over pie, covering lattice portion of top crust; let remaining sauce drizzle through the crust.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake until the crust is golden brown, the caramel on the top crust is set, and the apple filling is bubbling, 35 to 40 more minutes. Allow to cool completely before slicing.

TRADITIONAL APPLE PIE

Traditional Apple Pie image

From Mark Bittman's "How to Cook Everything" I usually don't thicken the filling for a simple apple pie, but if you want to make sure the juices don't run, add 1 1/2 Tablespoons cornstarch or instant tapioca when you toss the apples with the spices. I also keep spices to a minimum, since I'd rather taste the apple; you could safely double their quantity if you like a spicy pie, and add a pinch of all spice and/or cloves if you like.

Categories     Pie

Time 1h30m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 11

1/4 cup brown sugar
1/4 cup white sugar, if you like a sweet pie plus a little for dusting the top (or more)
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1 pinch salt
5 -6 cortland apples, McIntosh or 5 -6 any other baking apples
1 tablespoon fresh squeezed lemon juice
1 1/2 tablespoons cornstarch (optional) or 1 1/2 tablespoons dry tapioca (optional)
1 pastry for a double-crust 9-inch pie, bottom crust fitted into a 9 inch pie plate and top crust transferred to a rimless baking sheet, bot
2 tablespoons unsalted butter, cut into bits
milk, as needed

Steps:

  • Toss together the sugars, spices, and salt. Peel and core the apples and cut them into 1/2 to 3/4 inch slices. Toss the apples with the lemon juice and the dry ingredients, adding the cornstarch or the tapioca if you want a less runny pie.
  • Pile the apples into the rolled out bottom crust, making the pile higher in the center than at the edges. Dot with butter. Cover with the top crust. Decorate the edges with a fork or your fingers, using any method you choose. Refrigerate while you preheat the oven to 450.
  • Place the pie on a cookie sheet and brush the top lightly with milk; sprinkle with sugar. Use a sharp paring knife to cut two or three 2 inch long vent holes in the top crust. This will allow steam to escape. Place in oven for 10 minutes. Reduce oven temperature to 350 and bake another 40 to 50 minutes, or until the pie is golden brown. Do not underbake. Cool on the rack before serving to room temperature.

Tips:

  • Use a variety of apples for a more complex flavor. Some good choices include Granny Smith, Honeycrisp, and Braeburn.
  • Peel and slice the apples thinly and evenly so they cook evenly.
  • Add a little lemon juice to the apples to prevent them from browning.
  • Use a pastry blender or two forks to cut the butter into the flour until it resembles coarse crumbs.
  • Add just enough water to the dough to make it come together. The dough should be moist but not sticky.
  • Chill the dough for at least 30 minutes before rolling it out. This will make it easier to work with and prevent it from shrinking in the oven.
  • Roll out the dough to a 12-inch circle. If the dough is too thick, it will be difficult to fold over the apples.
  • Place the apples in the center of the dough and spread them out evenly.
  • Fold the edges of the dough over the apples, pleating it as you go. This will help to keep the apples from spilling out.
  • Brush the top of the pie crust with milk and sprinkle it with sugar.
  • Bake the pie at 375 degrees Fahrenheit for 45-50 minutes, or until the crust is golden brown and the apples are tender.

Conclusion:

Apple pie is a classic American dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With a little practice, you can make a perfect apple pie that will impress your family and friends.
