TOURTIERE TARTS

Tourtiere is a French Canadian meat pie that is traditionally served on Christmas Eve. I first ever had these at the home of a French Canadian friend..I have been making them at Christmas time as a make ahead appetizer for years now. It can be made into one individual pie, but I prefer the individual tarts..I freeze these individually on cookie sheets and then vacuum seal in my bagger or can be stored in a plastic container.

I got this recipe from a website called donogh. I've never tasted tourtiere, so I don't know how authentic these tarts are, but they are very tasty. They reheat well in the microwave, and are good hot or at room temperature.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your tourtière tarts taste their best. Look for high-quality ground pork, fresh vegetables, and a good quality pie crust.
  • Season the meat well: The pork is the star of the show in a tourtière, so make sure it's well-seasoned. Use a combination of salt, pepper, garlic, onion, and other herbs and spices to your taste.
  • Don't overcook the meat: Overcooked pork is tough and dry. Cook the meat just until it's no longer pink in the center.
  • Let the filling cool before assembling the tarts: This will help to prevent the crust from becoming soggy.
  • Use a good quality pie crust: A flaky, buttery pie crust will make your tourtière tarts extra delicious. You can make your own pie crust or use a store-bought one.
  • Bake the tarts until the crust is golden brown and the filling is bubbly: This will ensure that the tarts are cooked through.
  • Let the tarts cool slightly before serving: This will help to prevent the filling from spilling out when you cut into them.

Conclusion:

Tourtière tarts are a delicious and satisfying meal that can be enjoyed by people of all ages. They're perfect for a potluck, a party, or a simple family dinner. With a little bit of planning and effort, you can make your own tourtière tarts that are sure to impress your friends and family.
