Tossed Spinach Salad image

From-scratch French-style dressing is a bold topping that suits the hearty ingredients in this salad. When I make it to share at a get-together, I never have any left over. I take the salad and dressing in disposable containers and come home happily empty-handed. -Myra Innes, Auburn, Kansas

Categories     appetizer

Time 20m

Yield 4 servings

Number Of Ingredients 9

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

Time 35m

Yield 6 servings

Number Of Ingredients 15

1/2 small red onion, thinly sliced
2 anchovy fillets
2 tablespoons extra-virgin olive oil
2 cloves garlic, grated
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
2 large slices sourdough bread, crusts trimmed, torn into bite-size pieces
1/3 cup buttermilk
1/4 cup sour cream
2 tablespoons crumbled blue cheese (about 1 ounce)
2 teaspoons apple cider vinegar
1 tablespoon chopped fresh parsley
8 cups baby spinach (about 5 ounces)
1 small head red-leaf lettuce, torn (about 6 cups)
1/2 English cucumber, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Soak the red onion in a small bowl of ice water, about 30 minutes. Drain and pat dry.
  • Meanwhile, make the croutons: Mash the anchovies with a fork. Combine the olive oil, mashed anchovies, 1 grated garlic clove and a pinch each of salt and pepper in a medium bowl. Let stand 5 minutes. Add the torn bread and toss with your hands until the bread absorbs the oil. Spread on a baking sheet and bake, stirring halfway through, until golden brown and crisp, 20 to 25 minutes. Let cool.
  • Whisk the buttermilk, sour cream, blue cheese, vinegar, parsley, the remaining grated garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl until combined. Add the spinach, lettuce, cucumber, red onion and croutons; toss well.

  • Select Fresh, High-Quality Ingredients: The freshness and quality of your ingredients greatly impact the taste of your tossed salad with spinach dressing. Choose vibrant, crisp greens, ripe vegetables, and flavorful herbs.
  • Use a Variety of Greens: Don't limit yourself to just one type of greens. Mix and match different varieties, such as spinach, romaine lettuce, arugula, and kale, to add texture and flavor to your salad.
  • Don't Overdress the Salad: A light dressing is all you need to enhance the flavors of the salad without overpowering them. Start with a small amount of dressing and add more as needed.
  • Make Your Own Spinach Dressing: Store-bought dressings often contain preservatives and added sugars. Making your own spinach dressing is easy and allows you to control the ingredients and flavors.
  • Add Crunchy Elements: Nuts, seeds, and croutons add a delightful crunch to your salad. They also provide healthy fats and nutrients.
  • Incorporate Fruits and Berries: Fruits like strawberries, blueberries, and apples add a touch of sweetness and freshness to your salad. Berries also provide antioxidants.
  • Balance Flavors: Aim for a balance of flavors in your salad. Use a combination of sweet, sour, salty, and bitter ingredients to create a harmonious taste experience.
  • Chill the Salad Before Serving: Chilling the salad before serving helps the flavors meld together and makes it more refreshing, especially during warm weather.
