Time 1h20m

Yield 6 servings

Number Of Ingredients 13

4 boxes (9 ounces each) frozen artichoke hearts, defrosted
Good olive oil
Kosher salt and freshly ground black pepper
1 shallot, minced
3 tablespoons freshly squeezed lemon juice
1 teaspoon Dijon mustard
5 tablespoons white wine vinegar or champagne vinegar, divided
1/2 cup chopped fresh basil leaves
6 tablespoons capers, drained
2 roasted red peppers, sliced thin
1/2 cup minced red onion
1/2 cup chopped fresh parsley leaves
2 pinches hot red pepper flakes, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the artichoke hearts in a bowl with 1/4 cup olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss until the artichoke hearts are coated. Dump the artichoke hearts onto a sheet pan and spread out into 1 layer; roast in the oven for 20 minutes.

Tips:

  • Choosing Fresh Artichokes: Select artichokes that are heavy for their size, have tightly closed leaves, and no signs of bruising or discoloration.
  • Prepping Artichokes: To prepare artichokes, remove the tough outer leaves until you reach the tender, pale green leaves. Trim the stem and cut off the top 1/3 of the artichoke.
  • Marinating Artichokes: Marinating the artichokes in a mixture of olive oil, lemon juice, garlic, and herbs enhances their flavor. Let them marinate for at least 30 minutes, or up to overnight.
  • Grilling Artichokes: Preheat your grill to medium-high heat. Brush the artichokes with olive oil and place them cut-side down on the grill. Cook for 10-15 minutes, or until the leaves are slightly charred and the heart is tender.
  • Assembling the Salad: Combine mixed greens, marinated artichokes, cherry tomatoes, cucumber, red onion, and feta cheese in a large bowl. Drizzle with a vinaigrette dressing and toss to coat.

Conclusion:

This tossed salad with artichokes is a delightful blend of flavors and textures, making it a perfect side dish or light main course. The marinated artichokes add a smoky, tangy flavor that complements the fresh greens, vegetables, and feta cheese. The vinaigrette dressing provides a light and refreshing touch, bringing all the ingredients together. Whether you're enjoying it as a side dish or a main course, this salad is sure to impress your taste buds.
