4 tablespoons butter
½ white onion (diced)
1 tablespoon minced garlic
6 cups chicken broth
2 cups water
4-5 yellow potatoes (cut into 1-inch pieces)
3 teaspoons salt (or to taste)
1 teaspoon black pepper
2 cups heavy cream
4 cups chopped kale
chopped bacon or bacon bits and grated parmesan cheese for topping (optional)

Steps:

  • In a large pot saute sausage 5-6 minutes until browned. Use a slotted spoon to transfer sausage to a plate and set aside.
  • In the same pot, add butter and saute onions over medium heat until translucent. Add garlic and saute for another minute until fragrant.
  • Add chicken broth, water, potatoes, salt, and pepper and bring to a boil. Boil until potatoes are tender. Stir in kale, and heavy cream. Add sausage. Taste and add salt and pepper if needed. Serve garnished with grated parmesan cheese if desired.

3 slices bacon, cooked and crumbled
3 Italian turkey sausage links
½ onion, diced
3 cloves garlic, minced
5 cups chicken stock
5 cups 2% milk
2 cups green Swiss chard or kale, chopped
Pinch of crushed red pepper, or to taste
Sea salt and freshly ground black pepper to taste

Steps:

  • Cook the bacon in a large Dutch oven over medium heat. Drain on a paper towel.
  • Crumble and set aside.
  • Remove the turkey Italian sausage links from the casing and place in the Dutch oven along with the diced onion.

12 links spicy pork sausage, sliced
1 tablespoon vegetable oil
¾ cup diced onion
1 ¼ teaspoons minced garlic
2 tablespoons chicken soup base
4 cups water
2 potatoes, halved and sliced
2 cups sliced kale
⅓ cup heavy cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Place sausage links on a baking sheet and bake 25 minutes, or until cooked through. Slice into 1/2 inch slices.
  • Heat oil in a large saucepan over medium heat. Saute onions until translucent; add garlic and cook 1 minute.
  • Stir in broth, water and potatoes; simmer 15 minutes.

4 strips thick-cut bacon, cut into 1/2-inch pieces
1 pound sweet Italian sausage, casings removed
4 to 5 large russet potatoes (about 2 1/2 pounds), unpeeled and cut into 1/2-inch cubes
3 cloves garlic, minced
1 large white onion, diced
Pinch of crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 cups chicken broth
6 cups curly kale, stems removed and leaves roughly chopped
3/4 cup heavy cream
1 teaspoon white wine vinegar

Steps:

  • Cook the bacon in a large Dutch oven over medium-high heat, stirring occasionally, until crisp, about 6 minutes. Transfer to a paper towel-lined plate with a slotted spoon; set aside to drain. Add the Italian sausage to the drippings and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6 minutes. Transfer to the paper towel-lined plate to drain.
  • Add the potatoes, garlic and onion to the drippings and cook, stirring occasionally, until slightly softened, 6 to 8 minutes. Season with the crushed red pepper flakes and salt and pepper. Add the chicken broth, increase the heat to high and bring to a boil. Reduce the heat to medium-low and simmer until the potatoes are tender and cooked through, 12 to 15 minutes.
  • Add the kale, heavy cream, bacon and sausage and cook over medium heat until the kale is tender, another 5 minutes. Stir in the vinegar just before serving.

10 cups water
7 chicken bouillon cubes (not granules)
1 teaspoon salt
1 1/2 teaspoons crushed red pepper flakes
2 teaspoons garlic paste
1 lb russet potato, peeled and sliced (Or cubed. About 3 large)
1 lb ground Italian sausage
1 large white onion, diced
1 bunch fresh kale, torn in small pieces (or 16 oz. bag of prewashed and cut Kale. Discard stems)
1 cup heavy cream
4 ounces bacon bits, Hormel is good

Steps:

  • In a large stockpot, put water, bouillon, salt, red pepper flakes, garlic, and potatoes. Cook on medium heat, stirring occasionally.
  • Sauté the sausage and onion in a skillet, until the sausage is brown, then add it to the stockpot, along with the Kale. Simmer for 20 - 30 minutes, or until Kale and potatoes are tender.
  • Add the cream and bacon bits, and simmer for about 10 minutes.
  • Notes:.
  • I use 10 medium size potatoes.
  • Half and Half can be substituted for the heavy cream if desired.
  • Kale can be found in the produce department of most grocery stores.
  • The soup at The Olive Garden is not thick. If you wish yours to be more like a cream soup, simply simmer it longer, and mash some of the potatoes in the pot with a wooden spoon, and stir frequently until of the desired consistency.

2 cups spicy sausage (Jimmy Dean)
1 medium onion, diced
2 garlic cloves, minced
4 tablespoons chicken base
2 quarts water
1/2 teaspoon dried thyme
1 bay leaf
4 cups coarsely chopped potatoes
6 cups chopped fresh kale
5 ounces evaporated milk
parmesan cheese

Steps:

  • In some olive oil sauté the onion and garlic until transparent.
  • Add water and chicken base or 2 quarts chicken broth.
  • Add the potatoes (I like to use frozen hash browns that I always have on hand).
  • Add the seasonings.
  • Bring to boil. Cover with lid and simmer.
  • Brown the sausage, breaking up into small pieces, and drain in a stainer.
  • Wash the kale, remove the stems/rib. Slice across you can add fresh or thawed frozen spinach squeezed dry).
  • Add the sausage and kale to your saucepan and cook until potatoes are tender.
  • Add the can of evaporated milk and heat through.
  • Check to see if you want to add any salt.
  • Serve with freshly grated Parmesan cheese. Enjoy.:-).
