THE BEST MEXICAN TORTILLA ROLL UPS
I am requested to make these all the time. They are easy, and people LOVE them. I developed this over the years to suit our tastes. There are recipes close to this one, but I like mine best! The amount of tortillas you need will depend on how thick you spread the mixture. I like them thick. Zaar wont let me list the chilies, olives and pimentos correctly. But I buy the small can of each. They are already chopped small, so they mix in well with the cream cheese.

Steps:
- 1. Mix all ingredients together except the tortillas. Divide evenly among the tortillas and spread mixture over each tortilla. Roll the tortillas up and cut into one inch slices. Refrigerate for a couple of hours and serve! You can serve these alone or with some salsa for dipping.
Tips:
- For the best results, use fresh tortillas. If you're using store-bought tortillas, warm them up in the microwave or oven before assembling the roll-ups.
- Don't overfill the tortillas. You want to be able to roll them up tightly without them falling apart.
- If you're using a wet filling, such as salsa or guacamole, be sure to drain it well before adding it to the tortillas. Otherwise, the roll-ups will be soggy.
- If you're making the roll-ups ahead of time, wrap them tightly in plastic wrap and refrigerate them. They will keep for up to 3 days.
- To serve, slice the roll-ups into 1-inch pieces and arrange them on a platter. You can also serve them with your favorite dipping sauce.
