Steps:

  • Shallow-fry corn tortillas in vegetable oil in a skillet until puffy, 45 seconds per side; transfer to a baking sheet. Top with shredded monterey jack and thinly sliced red onion. Bake at 350 degrees F until the cheese melts, about 3 minutes. Top with sliced pickled jalapenos and cilantro.

Tips:

  • Use high-quality tortillas for the best results. Fresh, soft tortillas will fold and melt better than dry or stale ones.
  • Don't overload the tortillas with fillings. Too much filling will make them difficult to fold and will prevent them from cooking evenly.
  • Use a variety of fillings to create different flavor combinations. Some popular options include cheese, beans, meat, vegetables, and salsa.
  • Season the fillings to taste. This will help to enhance the flavor of the melts.
  • Cook the melts in a hot skillet or on a griddle until they are golden brown and the cheese is melted and gooey.
  • Serve the melts immediately with your favorite toppings, such as salsa, guacamole, or sour cream.

Conclusion:

Tortilla melts are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to suit your own taste preferences. With a little creativity, you can create endless flavor combinations that will keep you coming back for more.
