1 (16 ounce) package refrigerated cheese tortellini
4 ounces sliced pepperoni, quartered
2 green onions, sliced
1 (2.25 ounce) can sliced black olives
1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
6 ounces mozzarella cheese, diced
⅓ cup extra-virgin olive oil
1 ½ tablespoons balsamic vinegar
1 ½ tablespoons distilled white vinegar
1 teaspoon dried Italian herb seasoning
salt and black pepper to taste

Steps:

  • Cook the tortellini according to package instructions, drain in a colander set in the sink, and rinse with cold water.

1 package (9 ounces) refrigerated cheese tortellini
1 can (11 ounces) mandarin oranges, drained
1 medium grapefruit, peeled and sectioned
1 medium lemon, peeled and sectioned
2 kiwifruit, peeled and sliced
1 cup halved seedless red grapes
2 cups cubed cooked chicken, optional
1/2 cup maple syrup
1/2 cup orange juice
1/2 cup cashews

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, fruit and chicken if desired. , In a small bowl, whisk the syrup and orange juice; pour over salad and toss to coat. 1/2 cantaloupe
1/2 honeydew melon
1 can mandarin orange section, drained

1 cup fresh blueberries
1 cup sliced fresh strawberries
1 (11 ounce) can mandarin oranges, drained
3/4 cup green grape
1/4 cup toasted chopped pecans
3 tablespoons sugar
1 tablespoon vinegar
1 1/2 teaspoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 cup oil
2 teaspoons poppy seeds

Steps:

  • To make the dressing: In a small bowl, mix together the sugar, vinegar, lemon juice, salt, and mustard.
  • Slowly and gradually add the olive oil, beating until thick and smooth.
  • Add the poppy seeds and stir; cover and chill 8 hours.

24 oz cooked tortellini ( your choice )
3/4 c orange juice
3/4 c maple syrup
2 Tbsp ground cinnamon
pinch of salt
1 pt strawberries sliced
1/2 of a cantaloupe ( cubed )
1 c fresh green seedless grapes some cut in half some whole
1 c fresh red seedless grapes some cut in half and some whole
1 pt blueberries, fresh
1/2 c raisins or craisans ( your choice )
1/2 c candied walnuts ( optional )

Steps:

  • 1. Cook pasta as directed. Rinse with cold water ~ drain well.
  • 2. Toss with 2 teaspoons oil.
  • 3. Set aside.
  • 4. Add fruit and ( CANDIED WALNUTS ** if you choose to use to your salad )...
  • 5. mix orange juice,maple syrup,cinnamon,salt in a shaker. ~~Shake Well~~
  • 6. Refrigerate all till ready to serve.
  • 7. Add dressing.
  • 8. CANDIED WALNUTS In non stick skillet on medium heat. Add 1/2 cup Walnuts and 1 tablespoon sugar. Stir constantly. Remove when Walnuts are covered in sugar and sugar is well melted.

1 (8 ounce) package dried spinach tortellini
1 (8 ounce) package dried three-cheese tortellini
1 cup grape tomatoes, halved
1 (6 ounce) jar marinated artichoke hearts, drained and chopped
1 (6 ounce) can sliced black olives, drained
½ red onion, thinly sliced
¼ cup grated carrots
1 ½ cups oil and vinegar dressing

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spinach and three-cheese tortellini and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, 10 to 11 minutes.
  • Drain well, and allow tortellini to cool.
  • Toss together the tortellini, grape tomatoes, artichoke hearts, olives, red onion, carrots, and dressing in a large bowl.
